You have to "accept" the dimension, double click on the feature in the model, edit the dimension. Only then it allows you to use the global variable. Great tip. I made a flashcard for it.

I run a Dell Precision 7520 with a Xeon, 32GB ram and Nvidia Quadro M2200 graphics. Works good for me. In school on a tighter budget, I ran SolidWorks 2018 on an i3 and it worked for my needs so you don't need insane hardware.
Dassault provides some hardware guidelines here: www.solidworks.com/sw/support/hardware.html
You can also check if your hardware would be RealView compatible which doesn't enhance your ability to model, but really is a nice touch. Follow up with any additional questions, welcome to the channel.
