I find Oysters all 12 months here is a Chicago burb. This Jan and then in Feb I found them during thaws as well as last Dec. Interestingly, I've never found them in March!
We have a lovely little (really it’s not so small) park area that the township has set up for school children to explore a lot. It’s open to everyone year round too. I’ve been practicing there and find quite a few mushrooms. It’s been really fun finding them and learning the different types. I’ve not been brave enough to eat them yet because I am so new but with your information I think I’ve gotten pretty good. Well fair anyway. Spore prints are essential I think for newbies like me especially. I wish I could tell you how much you’ve helped me and how grateful I am. I’d have to write ya a book! LOL Thank You so much for your generosity. The fact that you care enough about your fellow man to put such AMAZING videos out for free (I know UA-cam sure don’t pay ya what you’re worth!) is priceless to someone like me. I'm not sure where you live exactly, though if there's a mushroom club within the vicinity of your town, I'd strongly recommend joining the organization and attending the walks. After a few forays, you'll definitely feel comfortable and confident in harvesting and eating wild mushrooms. That's exactly how I got started.
Lisa, Just to echo what Adam said, I found a local mushroom club here in CT and they were extremely helpful. Also, I wanted to echo the virtues of small local parks for mushrooming. I have one near my office and often walk through it at lunch time. I think since it's so familiar to me, I really notice when something new pops up, like a mushroom. Not to brag (OK to brag), but I found some beautiful giant puff balls there, took a selfie with them, and now they grace with Wikipedia page for calvatia gigantea en.wikipedia.org/wiki/Calvatia_gigantea

I was outside rolling up hoses for the winter when a term you use, "gelatinous lump," struck my funny bone and I giggled to myself... right before I heard a crack and I realized **I** now had a gelatinous lump in my pocket in the form of an egg I'd collected but forgot to put away. heheh I was born in Johnstown and have family in the area of Somerset/Nantyglo (sp, I left when I was 3) and I enjoy seeing what mushrooms I might have grown up near in another life. :-) Thank you for doing this!

What about winter chanterelles (yellow feet), hedgehogs, and candy caps? Near the coast here in Oregon, can still find the very last of golden chants, caulis, hedgehogs, winter chants, and candy caps. Cheers!
Hey NC mushroomer. I too live in NC, in the foothills area (WNC) and enjoy searching for oysters, honeys, brickcaps and wood ears. I find a good variety of edibles in the winter (its fairly mild here however, not like western PA) but the real interest for me is exploring the world of the polypores. There are dozens and dozens of wonderful wood decayers all over my woods. I can spend hours looking at the dead branches and "infestations" on dead tree trunks. Although I am retired and have "nothing but time", I do try to limit my shrooming to a couple hours per day, right about 2-4 PM before my afternoon chores start. Good hunting! DD

Its going to be 50 on Friday and I'm very excited to go mushroom hunting, Ive had a lot of luck finding Late Fall Oysters, last found them on Christmas day frozen to a tree, they go great on buttered toast. Hope to find some more to put on pizza!!!!

I've never encountered wild Enoki but have had the cultivated variety and am shocked at how different the morphology is: cultivated enoki are very tall and slender with extremely long stalks and tiny caps and they are pure white....very tasty but need reasonably long cooking because the stalk tends to be a bit chewy in my opinion
I just had a great meal of chanterelles and black trumpet mushrooms which is found by mistake or (fortune) how ever you may think. I cooked them up together in olive oil butter , garlic parsley and bacon... delicious. I transplanted both on my property that is inviting to both species... Hopefully next year I will find the produce. The Chanterelles already grow in an area in the back yard. Hoping for more production.
Great video Adam! Maybe I can get the winter camp crew out on a mushroom hunt as we gather our much needed fire wood. The crew and I are heading out on the 24th of this month, for 4 nights in the backcountry somewhere in Michigan.

We have usually found oyster mushrooms very close to water, often on logs partially in a creek or just outside of a creek

Thank you so much for your informative videos. What has been your experience on the best way to store P. ostreatus? Vacuum seal as is? Blanch first then vacuum freeze? Dehydrate and rehydrate when ready to use?
U can put oyster mushroom into boiling water for a minute or two, then take it out to frozen.

I've never encountered wild Enoki but have had the cultivated variety and am shocked at how different the morphology is: cultivated enoki are very tall and slender with extremely long stalks and tiny caps and they are pure white....very tasty but need reasonably long cooking because the stalk tends to be a bit chewy in my opinion

I just had a great meal of chanterelles and black trumpet mushrooms which is found by mistake or (fortune) how ever you may think. I cooked them up together in olive oil butter , garlic parsley and bacon... delicious. I transplanted both on my property that is inviting to both species... Hopefully next year I will find the produce. The Chanterelles already grow in an area in the back yard. Hoping for more production.
How do you transplant mushrooms?
I've seen a jelly mushroom before in Louisiana.
And from time to time. After a rain or a dew grass morning we'll have the mushroom ring.
Great video Adam! Maybe I can get the winter camp crew out on a mushroom hunt as we gather our much needed fire wood. The crew and I are heading out on the 24th of this month, for 4 nights in the backcountry somewhere in Michigan.
