Oil for frying
1 cup milk
2 large eggs
2 Tbsp sugar
1 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp salt (a "pinch")

Bring the griddle to med/high heat (*you want to ensure you can get your oil up to 365-375 degrees). Place enough oil in an aluminum tin on the griddle to fill approx. 2 inches. While the oil is coming up to temperature, mix the wet and dry ingredients. In a large bowl, whisk the milk, eggs, sugar, and vanilla until all ingredients are mixed well. In a separate bowl, whisk the flour, baking powder, and salt. Once all these ingredients are mixed well, combine the wet and dry ingredients and stir until all ingredients are evenly mixed, and there are no clumps.
Place the batter in a pourer, or you can use a plastic bag with a hole cut out of the bottom corner (a med/small hole, ensuring you keep the hole covered until you are ready to pour into the oil). In a circular motion, pour the batter into the oil, ensuring the batter lays over itself as it cooks (recommend approx. 6" cakes). Fry until your cake is golden brown (approximately 1-2 minutes), and then flip the cake and continue cooking an additional 1-2 minutes until it too is golden brown. Pull from the oil and drip off excess oil. Set aside on a paper towel. Best served hot with powdered sugar or your favorite sweet topping!
