    When I was young I caught carp and since our family did not eat carp, I gave them to a friend. He steamed them like salmon are prepared so that the many bones became soft.

    Here in Florida, most of the counties once had a mullet-driven economy...not tourism. We'd butterfly the fish, not scale them, season them, and lay them on the smoker with either green oak, green persimmon, or green wax myrtle wood. The smoldering is necessary. We'd also use a fan to dry the meat first to make sure the smoke adhered to the flesh better. Butterflying the fish saves hours of time, it allows better access for seasoning, and it greatly speeds up cook time. The scales insulate the flesh and cause the fish not to stick to the smoker racks. No need to worry about the slime as it was took off ahead of time by soaking the mullet in ice water with aome vinegar added...the slime rolls off in less than 30 minutes of soaking. Mind you, the vinegar would already be in the ice chest when the fish were netted, so that time getting the slime off was in-field fishing time and doesn't count towards overall prep time. From the time the fish were taken out of the ice chest to off the smoker would be about 4-6 hours (depending on the heat of the smoker and size of the fish...a slower colder fire preferred). Smoked fish dip, fried smoked fish patties, smoked fish stew (with canned diced tomatoes, a handful or two of rice, a cubed tater or two, and Cajun seasoning), and smoked canned meat are all fantastic options that were year round staples. What roe we didn't fry up and eat would be sold for top dollar to Yankees where they'd cure it in salt (and sometimes sugar) for Italian cooking...basically they'd grate it on top of food like cheese. I hear, with our mullet economy almost dead now due to tourism taking over, that many Italuans have turned to buying shad roe to cure. George Washington made his fortune from smoking herring shad.

      Oh man that’s awesome history! I’ve eaten smoked mullet in Florida in Horseshoe Beach! I once had some awesome times with friends there!

      Amen to that Ken, mostly netted ours around Everglades City. Off with the heads, gut & butterfly, sprinkle with Tony's and smoke. All the popular woods work for us including citrus (preferred). Unfortunately mullet are in decline.

    Hey brother Micah it’s Jeff again from PA. You know how a pair we eat carp we go out and get a piece of pine tree and we cut it down and then what we do is we clean the carp good and then season it with camp dog maybe some pepper or salt ice sprinkle a little red hot on it and nail it onto the pine board and then we put it into the oven and bake it for like an hour and a half and then you pull it out of the oven nice and sizzle and you take off the carp You throw the carp away and eat the wood.

    My dad would clean them and soak them in buttermilk for 24 hours, then using a cherry or apple wood smoke them for 36 hours. Absolutely beautiful and very tasty.

    Hey thanks for sharing that smoke carp.. when I was a kid my aunt Francis pressure cook the Carp and make a carp Croquettes or whatever salmon patty type thing.. so it would be carp patties.. it was delicious... hadn't went carp catching in a while.. my daddy used to take me and my brother and my sister.. when the lake would flood over in the low spots on Cedar Creek Lake in Texas . between Kemp Texas and Seven Points Texas used to flood out real bad by the creeks and now they turned it into a golf course.. we would go out there and kick the car out of the water or hand catch them Carp some weigh in #15 also along with alligator gar.. we didn't know how dangerous messing with them alligator gar was I guess.. where was between the ages of 6 and 10 years old.. I was the youngest baby girl.. sure wouldn't trade none of the memories for nothing.... thanks for bringing These Memories Back To Me.. great memories of my dad my brother and my sisters all have passed..
    just add a little bit of a funny moment also at one of the meny time.. we was carp catching.. I found a three baby skunks.. I thought I was going to be Ellie Mae Clampett on The Beverly Hillbillies and have a pet skunk.. my daddy said no I don't think so real quick..😂 thank you y'all have a blessed day and keep on sharing and I look forward to watching more your videos❤❤

      @@McGieHomesteadAdventures yeah it's some good crappie fishing off them bridges used to back in the mid-70s all the way up to 89 last time I went fishing on Cedar Creek.. lots of my family out from that area and we have a family Cemetery King Cemetery they have a picnic the first Saturday in July help keep up the the grounds.. now live over by Lake Tawakoni and it's the catfish capital of Texas I think..

    I was told a long time ago by an elderly gentleman that the best way to cook carp was to pressure cook it. He said that it makes it like canned salmon or mackerel and just like those, even the bones are soft and edible then.

    Fried carp can taste better than catfish, but it's a lot of work, and most of the fish is discarded, not being wasteful if used as fertilizer. Bleed the fish immediately, then into the ice, fillet/skin, split fillet down the lateral line, trim the red meat, remove the y bones, (YT videos for that) soak strips in salt water overnight, rinse, then soak in milk about 40 minutes before cooking, much longer than that and you'll end up with a bowl of mush, it's great for removing the remaining muddiness but it will also cook it to goo. Late fall, and early spring are best, a smaller mud vein means less to discard. I never gave up on carp, and through many years of learning from others, I think I've pegged it. Just a thought anyway.👍

      @@McGieHomesteadAdventures thank you, I'm sure you have found ways that work for you and your family, I will occasionally post this whenever I see someone doing a carp catch and cook because of the inevitable "you can't eat those, they're nasty!" throwing them on the bank to rot is disrespectful to the life, the environment, and other fisherman. if nothing else they should at least turn them into fish emulsion, now that's something your corn would appreciate before a good rain. 😜👍

    As a youngster we ended up catching a whole lot of big carp, which we didn't eat. Another family on down a ways caught a whole lot of catfish. The wanted the carp, we wanted the catfish. It was a great trade.

    Lived on Great Lakes as a young man we caught lots of carp that we traded off to the Old Guys (Well lots older than us.) Fishing on the river banks for boat motor gas money. Did get some smoked carp back from an Ancient Indian woman. Memories. Very tasty. Best

    Oh heck yeah it turned out looking really good! I remember watching a video of someone grinding it up with the bones and making fish patties and I don't remember them having any issues with the bones . Did he really eat the eye lol ? Thanks for sharing and have a great day!

    We used only the rib section for smoking and my Grandma would pressure can the rest and it would taste like salmon. The small bones were edible that way.

    It looks delicious. Eating some bread will help with swallowing some fish bones that get stuck. What did the two other fish taste like overall? One side tasted like jerky and the other side tasted differently, I presume.

    Great video. We eat a variety of fish that are considered trash fish down here in La. Gar, Grinnell, Choupique all are pretty good if you know how to cook them.

    Those Carp must be a lot like Mullets. They have so many bones. When they do commercial fishing here, alot of Mullets(Suckers) just get thrown away. Dad said years ago when they caught them, some Hutterite colonies used to buy a bunch of them.

      I definitely can imagine that the Hutterites would can them in a pressure canner and eat the bone and all! We did that and still do!

      Where is here? The mullet he's talking about are not mullet sucker fish. Mullet from saltwater have no bones (pin) in the meat only rib and backbones.
