I have to remind you this, Nine Sols is not like Hollow Knight in that you need to find lore extensively throughout the world to understand the story. The story already presents itself with the dialogue, read them and you'll understand the story. The lore pieces around the world are not many but they serve for players who are interested in worldbuilding. Of course, these lores do sometimes serve as a backstory for some parts of the story but they don't actually explain everything, the story is already here. So don't just skip the dialogue, if you're interested in the story, read them. The narrative in the game is more traditional than the one in Hollow Knight in that it "spoonfeeds" you rather than you having to find them yourself.
Okay, so regarding the combat, from someone who played Sekiro for hundreds of hours, the parrying here is done very well. I guess you're just not used to the Tai-Chi Kick but you'll get used to it soon (haven't fully watched the video) but for someone like me who has played Sekiro, the Tai-Chi Kick isn't hard to master. In fact, I'd argue that the Tai-Chi Kick is much easier to use than the ground parry since *it covers ALL directions* so you'll find it easy to use most of the time. Be patient, understand the bosses' patterns and you'll get to feel the satisfaction of the parry combat this game offers. The learning curve is tough, yes, but once you get the hang of it, it'll feel really good. The game might be my game of the year
Edit: Remember, imprecise parry punishes you by having similar health loss as Bloodborne, you can get it back slowly BUT once an enemy hits you, you'll lost them all AND added in the default damage they inflict. So be careful and master the parry, the game heavily focuses on that. The talisman you're using NEEDS you to hold it until it explodes, dealing damage. If you want one where you just have to click the button no holding needed, check the skill tree but for now, you'll have to settle for holding the button

The Shanghai 9000 you saw before the boss fight is indeed the one you need to alt + F4. (They'll give you a data chip that tell you how much treasures you have in the map, if you give the chip to your base shanghai 9000.
You did a lot better then me on in my first attempt at the boss. It personally took me around 20 tries. 2nd highest tries for a boss in the game for me.
A few general skills and jades i reccomnd getting for any future boss fights.
(Chiyo/merchant) Quick dose jade: Literally the most useful jade in the game. It makes Yi use his healing pipe faster. Even outside of boss fights, it's extremely valuable. (I Wish I equipped it sooner, but didnt think the effect would be so strong.)
(SKILL) Breathing exercise: You heal a portion of internal/red damage for a precise parry.
(SKILL) Qi boosts: you get a second charge for your tailsman. If you use 2 charges it deals more damage then 1 charge. Same with if you use 3 charges over 2 charges.
