    IMO, the reason Chef Jean-Pierre is so beloved by his us his fans is not because of his culinary skill or because of his talent as teacher or his enthusiasm for cooking or even his delightful sense of humor. It is because of his humility. Watching a man of so many talents exude the milk of human kindness in every thing he says and does is uplifting and inspiring. Chef Jean-Pierre doesn't just show us how to become better cooks, he shows us how to become better people. God bless you, chef.

    I KNEW you were Italian! No mistake, your joie de vivre reflects your French identity but you have an unmistakable Italian lightness that lifts us all up. 2 1/2 years in internet years? You have just begun. I now know what I will be doing for the next six months: exploring your playlists and expanding my repertoire. Recipes I have lost and would love to rediscover: potage Crecy and a very elusive one: lobster and chicken Catalan. Even Google couldn’t help me with that one.       Great cooking show, OR GREATEST COOKING SHOW!? I love chef Pierre's approach to cooking. A tight kitchen, care and love for the ingredients, and a fervent adherence to best practices while exploring new ideas and methods. And of course a love of food, all while having a good time. Nothing too crazy, everything is approachable. My favorite cooking channel to watch and I've tried with great success many of these recipes.

    I came here for a recipe yet I stayed for the chef. Great to hear the story about Jack being your stepson and you offering him a job. Now Jack's comments/banter are even better😅 love how you ended recommending other chefs thinking about retirement to start their own channel. And how you never shill your products more than necessary, you seem like a good and honest person and you deserve all the good that happens to you.

    The most fascinating thing here is to understand that 50 years ago or so, it wasn’t very easy to get a recipe from a chef. They kept things to themselves. It’s amazing how there are folks like Chef Jean Pierre that love to share his expertise and recipes with us. He is a gem indeed.

      One of my fave shows from years ago was "Great Chefs, Great Cities" where you only saw a quick shot of the Chef and the rest was from mostly overhead and side cameras showing the actions and techniques. Learned a lot from those as well.

    I have been watching JP now almost since the start of the channel and I must say this is one of the best videos yet. A genuinely sweet and generous person who has enjoyed life to the fullest and now is content and enthused to share his experiences, freely, in and out of the kitchen with 1.3 million people, most of whom he will never have met - yet he has opened up in a masterful and sincere way.     Chef Jean-Pierre is like the Bob Ross of cooking videos! He makes gourmet cooking accessible to everyone. The first recipe I ever made from this channel was the cherry clafoutis. It was like a gateway drug!!! Chef Jean-Pierre has given me the confidence to go all the way up to his amazing Lobster Thermidor! Thank you, Chef!

    I did my chef training in the mid-90's and unfortunately I was surrounded by stressed out substance abuser so-called shefs so became disillusioned and left the profession. I still love cooking and appreciate a mentor such as yourself, thank you ...

    This makes me feel so lucky of all those meals at your school yet sad that covid made it impossible to continue.
    For those who have not experienced JP in person think about being able to have him cook a meal for you and in front of you for about the same cost of actually just buying the meal at a restaurant but being taught how to cook it at home and experiencing his humor and charisma. (while BYOB!)

    I think you were so lucky to have family that taught you so young. My grandma taught me how to cook the perfect white rice. And I cherished that one lesson.

    Thank you Chef Jean Pierre. This year you came into my world through UA-cam. Loving everything about your methods and style. A one of a kind personality. Recently visited my 86 yr old Mom, Who is loving her life everyday. Making quilts, crocheting, plays cards and searches recipes with excitement, and was watching one of your recipes when I arrived. What a wonderful moment to see she found joy in your channel. I once saw a tip for onions. Put a damp cloth near the cutting board. No more tears. Tried and it worked!

    I’ve just found this channel and have fallen in love straight away. Can’t stand watching other chefs (that I won’t mention) who say everything they cook is cheap and easy when it’s absolutely not! Jean Pierre is an amazing chef, entertainer and artist.       The jambalaya is boss, but the written recipe didnt work out. I needed raw white rice, if i remember the written recipe calls for parboiled. The flavor was great, so once i did it again and used raw rice in the recipe, it came out amazingly well. A top notch low budget meal that can feed a crowd.
      First recipe from him i tried, after his shepherds pie video got me here, was the mushroom. I felt like a kitchen master that day, the finished product is THAT good looking. The cheese mix instantly made me nostalgic for my late mother. She used to buy a similar product and I'd steal it all for crackers. I'll be forever humbled by this man casually teaching me how to make my mom's favorite cheese spread.
      His recipes always teach you multiple things. The mushroom video is short but jam packed with some overlooks basics. Remove the gills, balance the dressing, a cheese spread AND a balsamic drizzle. Mama mia!
      I bought the dishes and then made the lava cake. Screwed it up. Didnt set. I think the recipe's timing is off, or i dont have the same size container. I havent redone it yet, so im not willing to blame the written recipe.
      I say written recipe because its sometimes not exactly as it was in the video. Clearly, he's a wiz with food and struggles to articulate what he did. He knows how much/how long he needs by looking and just fills up his pots unless purposefully being meticulous, in which case the written recipe is, too. We need someone to help rewrite the recipes for Chef. I have thought of offering to do it, but im just a learning home cook, so i figured a culinary student or another retiree from the industry hanging out around here would be better suited.
      Sorry to ramble. Gonna go pick some recipes ive been waiting to move on and make a week of it.

    Thank you for this episode. I just retired from 45 years as a commercial painter. I passed my business on to my partner. Now I have even more time to be in the kitchen. Growing up I stood beside my mom learning the basics “ don’t pack the flour, fold it in,etc. chef you truly inspire and show me that I can do these wonderful recipes. I live in alaska and have fresh King Salmon often. My favorite way is to cut 3/4”, lay on foil, little salt and pepper, inside Bar-B-Que. the flavor of the fish is AMAZING! I so wish I could give you a nice King salmon and watch you work it. I could send you one????? Blessings and Thank You. I remember hearing a phycologist say “We are happiest when we are learning”

    My French grandmother used to make a Cherry Clafoutis for me every summer when I would go to France to spend the summer with her. I have recently discovered you and your UA-cam videos.     I don't want to get too over the top but this channel has really changed how I look at cooking. My passion is BBQ and always will be. That said, I'm a helluva kitchen cook as well and have been made SOOOOO much better by your channel. The cooking techniques, knife work tutorials, attention to detail, kitchen tools used, and my plating game has gone to the next level.     Just watched this absolutely delightful video and I fell even MORE in love with this amazing man! I hope the in person event happens soon...I'd be among the first in line. His girlfriend is a very lucky lady, as is everyone who if fortunate to spend time with him on a regular basis. Love having his recipes available on UA-cam...he's made cooking fun again for me❤

    Chef. You are the most humble and most talented chef on You Tube. I grew up cooking and canning with my mother in the kitchen, but lost real interest as a young adult. You are one of a very select group of culinary experts that has reinvigorated my desire to cook better and master technique. Now, once again I love to cook and am proud of what I can do in the kitchen for my family and friends.
    Thank you from the bottom of my heart for being one of the best teachers I have ever had. At 57 that is saying something. Because of you, I am able to practice my skills with a couple of professional chefs in my Masonic lodge here in NH. when we do dinners, etc. ( I pick their brains and learn from them as well )
    I'm sure you have no idea as too how many peoples lives you have touched over the years, but on behalf of all of us, Thank You for sharing your love of your craft and making us all better people.

    As someone who works in entertainment industry I must say I'm pleasantly surprised to learn Jack is someone you brought on at the beginning with no experience. He does a wonderful job editing and I love knowing that you two have known each other for so long. Your whole team is so amazing and you are such a joy to watch and learn from. Thank you chef for everything you teach us and thank you Jack and others behind the scenes who help to bring us delicious and simple recipes. I just made your mushroom pasta recipe again and every time I make a recipe you give I say out loud " goddamn it, the chef did it again!"

      I love that Jack said, “I don’t want a favor, I want a job!” That shows the dedication he has. I think Jack does a wonderful job! My husband is always envious of Jack, he stays off camera, can make jokes and gets to eat Chef’s Creations. My husband has told our sons a few times….’that the genius, be like Jack!”

    Out of necessity, I started watching your channel in earnest about 4 months ago. My wife who was a great cook became very ill and passed away. Before her passing the only thing I was ever allowed to do in the kitchen was scrubbing pots and pans LOL, hey stick with what you do best. Now that I am alone I was forced to learn how to cook and you my friend have made that possible. Thanks to you and Jack my kids are now amazed at what I've learned. Thank you and God bless you both.

    As an avid cook, I was fortunate enough to come across Chef JP’s channel from the start. Since then, he has elevated my skills to levels I never thought possible. I’ve now become the exclusive cook during the holidays and events for mine and my extended family…..as JP mentioned, it’s rewarding when you cook well. I wish the Chef continued success for his channel and well wishes in his life. He truly is an amazing person and soul.

    As someone whose about to start their own cooking channel, you've personally taught me about 4 things I've never seen anyone else do that are so amazing. How to add flour and thicken something using the strainer right in the sauce is just one example~!
    And don't listen to the recipe police! Rock on Chef!!!!

    JP, this video was such a blessing. i gave up cooking many years ago but watching your videos made me embrace my kitchen and not be afraid to try new recipes, since then ive created some awesome dishes. your enthusiasm in the kitchen is contagious, your knowledge is incredible but most of all, you make cooking fun. if ive had a rough day at work, your videos just cheer me up and let me focus on good things in life.

    I just watched one of the old episodes of sunshine cooking and it was so much fun to watch you cook from back in the days. Especially as i saw how you've developed since then! It was the episode you made your shrimp sambucca. Back then you still cut your shallots both with the fibers and horizontally before chopping and, something you talk about here before min 19:00 , poured olive oil in your butter to prevent it from burning ;) with time we understand what works and what doesn't. Loved the episode!I hope we can get more of these Q&A's in the future!
