Hello guys. I'm an awful cook but my wife is pretty good at it and she loves to cook desserts and cakes and biscuits and all that stuff (and i'm an happy man but a little out of shape, you know).
Some years ago she decide to make the panettone that is, i think, the most difficult leavened cake of traditional Italian pastry. So, she started in OCTOBER to create the natural yeast and then she start to try different recipes. A long streak of tragic failures. She woke up in the middle of the night, sometimes at 5 a.m., or she stay awake an entire night just to cook proper that damn thing.
At a certain point, and we was at 21 december, she said that the problem was the temperature of our home. So I went to the largest hardware store in the region and bought laminated wood panels, screws, hinges, handles, electrical cables, a battery-operated thermostat, rubber feet, electrical sockets, a switch, gaskets and a reheating coil for terrariums.
I went to my father's cellar which is full of tools and I built a constant temperature leavening cell with the possibility of setting the temperature with absolute precision. The cell could keep a constant temperature that could be chosen between 20 and 35 ° C with an error of 0.5°C. It took me about 6 hours of hard work.
I gave it to my wife and voilà, on December 24 the panettone came out of the oven with the right height, the right weight and the right color.
On Christmas day we cut it in front of the whole family and it was ... absolutely perfect.
According to my approximate calculations and not counting the hours of work, but only wasted ingredients, thrown panettone shapes and all the material for the cell, we spent approximately € 150 ($ 170).
But she was happy.
However, the following years we went to the best artisan pastry shop in the area and bought a delicious panettone and then we went to make some shopping
We spent less a fifth of that amount, but now we have a story to tell (and a leavening cell) so...

I have a sourdough starter, from Italy. We cannot make our own in my area, see as there is not enough, or that correct organisms in our air. I will use mine.
I began my lievito madre the first week of October and on day 11 I got so sick and ended up in the hospital until the 15th. I really wanted to try it this year but i don’t know if I still could. That being said, LM discard makes AMAZING chocolate chip cookies!!
…and this is why, after 30 years in Italy, I buy my panettone from my local baker!!!

I, for on, am relieved to hear that even an amazing cook like Eva has an occasional bad time in the kitchen. I’ve been cooking for 50+ years and I mess up occasionally. That’s just how it is. Cooking is an amazing skill that’s part art, part science, part inspiration, and lots of work involving many moving parts. It can’t possibly be perfect each time…but oh, how it shines on a good day!
Oh my God this whole video put me through a whole range of emotions. It had tragedy when the beautiful doughs of pannettone with all that expensive butter and egg and fruit (and all of Eva's blood sweat and tears went into them) refused to rise or would fall apart when they were baked. The part about running out of the paper liners gave me anxiety. The part where you were texting each other about the level of rise of each pannettone each hour was suspenseful. The part where you two figured out the salt in the butter was like the surprise ending of a movie where it all makes sense. The end part where Eva made a simplified version using no homemade sourdough starter which needs to be looked after like a pet dog every day made me so happy. This whole pannettone journey was like a huge movie, like The Pannettone Nightmare Before Christmas. Honestly when Eva produced a simple recipe at the end, that was a true Christmas Miracle. Eva creating that simpler recipe, I hate to say it, was a bigger challenge than when Mother Mary gave birth to Jesus in a manger while they were trying to avoid being killed by King Herod lol! Bravo 👏
When bakers & pastry chefs say follow the recipe exactly, they mean it. I can only imagine Eva's reaction when she realized there were 2 different types of butter (salted vs unsalted/sweet). She must have been ready to pull her hair out in frustration. I'm glad Harper noticed that slight but massively important difference in the butter. Guys- have a wonderful holiday, & thanks for sharing your glorious recipes with us.
There’s also cultured (sour cream) butter popular in Northern Europe 😅

When I asked my cousin in Legnano for a family recipe for Panettone he sent me a picture of a boxed Panettone that they had bought from a store. LOL. I did try to make my own a couple of times. The second one was edible, but the texture was all off. I am sticking with buying mine. Love your videos. Thank you and Merry Christmas

I think salt stops or controls the rising so I see how it made a great impact. Baking IS chemistry, microbiology and art also a science project especially if you've repeated a recipe that many times.
I think a kitchen aid is a lovely gift. I was surprised everyone was giving you a hard time. I got gardening stuff for Christmas, and it was just what I wanted. What I asked for in fact ❤️🎄🎁

Panettone is largely consumed here in Argentina, as we have a huge population of Italian descent. Yet I've never come across anyone who makes their own panettone at home. Now I can see why! What's wrong with the Kitchen Aid mixer? I love that brand.

my husband wanted to buy me a new kitchenaid stand mixer this past christmas and I told him no because I didnt want him spending that much money, but Ive been regretting it in the weeks since Christmas. People make jerk comments about things they dont understand, if that is something that makes the other person happy because they love to cook and will use it and they dont get pissed about it, then its no one else's business in my opinion. Had my husband just gone and bought me the mixer, I wouldve been super happy with it, but still upset over the money they cost, now if he comes home with say a pair of diamond earrings, that would be something I would get upset over, because it would prove he doesnt know me at all even after 18 years of marriage, because I hardly ever wear earrings. Everyone's preferences are different and I am sure that Eva's put that mixer to more use than people will ever realize. Btw, I have a KitchenAid stand mixer already, but its 16 years old and I really do need a new one, I just hate spending the money.
Mystery solved! I remember the beginning of the dough journey last year! I am so grateful to my Sicilian mother who makes panettone every year at Christmas and gives them to our family. I have a whole new respect for this delicious gift! Buon Natale! ❤️
My grandparents used to always have a starter yeast to make mostly the batter for sour dough pancakes. Probably some of the best pancakes I've ever had.

I appreciate all the hard work it went into making that and any other recipe that is a labor of love to show us how it’s made. At some point I will attempt to make that. I’ve made Amish Friendship bread that takes about a week to make and it was a big hit in the house. Maybe you could make that, not for a video, but just something interesting for yourselves. They have the recipe online for the starter and its easy but just takes a long time.

My parents came from Calabria therefore mom used to make panetone every Christmas, while there was a lot of mumbling and even a few words in Italian which I can't repeat. At last she went to the Italian store and tried a panetone and said. Ok ! She never made another panetone but bought them. Made it easier for her.

Congrats!!!!! I started making panettone 5 years ago after I had my own culture of lievito madre. The truth is that it takes time, dedication and quite pricey ingredients, not to mention the special italian flour for panettone. But it is worth the time and effort. It doesn't compare to any other sweet creation...

I have been in bread making rabbit hole since lockdown. I converted my sourdough starter to pasta madre and made my very first panettone this christmas and I swear I’ve never been this proud seeing it come out of the oven. Everyone says it’s the Everest of bread making but your panettone video truly gave me a huge inspo that I can do it too. I’m glad Eva kept going and made it successful finally 🥰

Eva, panettone is one of the most difficult recipes, I would never, ever make an attempt, but you did, and only three failures is actually great! Eventually what you baked turned out amazing, incredible!! Complimenti guys you are amazing
This is why I love baking and cooking. It's a labor of love! As the late Antonio Carluccio said, "cooking for someone is an act of love." I love the O holy night bg music you did in the end while Eva was making the panettone. It added to the passion of what Eva was doing. And lastly, only people who don't love to cook would not like a kitchenaid mixer as a gift.

Beautiful episode. The end made me weep a bit. I made 8 this year with my natural starter I made from an Ohio evercrisp apple and kept alive for 3 yrs and use weekly. After the first 4 I made this year I said no more! Then remembered more people who would like my panettone. So I made 8.
When I saw your video about panettone, I was really surprised. Altough Eva skills are incredible, I know, from a friend of mine who is a pastry chef, that panettone preparation is very critical. So I concluded that Eva had some supernatural powers... Well, now I know she is human, she is "only" a fantastic chef, with an incredible amount of food culture and a great passion. Buon Natale!
As someone who started experimenting with cooking in earnest this year, I fully understand how sometimes you can do everything right and things don't always turn out well. I have my own "semi panettone" in the fridge that is being sluggish in the rise compared to my other brioche doughs this week. I'm hoping taking it out of the fridge to prove for a while will work. I hope it turns out as gorgeous as yours! Thank you both for your humility in sharing your story. It is very reassuring to know flops happen and it doesn't make me a failure as a cook. Perhaps an extra advice: pick the raisins (or other dried fruits) out of the dough, that you can see on the surface. Sometimes the burn form the oven heat and get bitter. Don't know on which temperature your bake the cake but it can make a difference.

The first time I tried a "Panettone" was a "Pandoro" 14 years ago by a friend from Friuli. I ate have of it while standing at my kitchen counter. It's only recently I have leanred they take so long to make. One of my favorite ckes/pasters. Thanks for teaching us about correct Italian and not American Italian cooking.
I can't believe! Even I made one when I was in culinary school. But I didn't use fresh yeast. Here in Brazil there's no Christmas without panettone. We always buy one and give as a gift to the relatives and friends. Poor Eva, so perfeconist! The panetone looks very nice and it's more real because everyone can do it. That's democracy! Happy Christmass.

Panettone Milanese, as well as Pandoro Veronese, are desserts that are difficult to make as they are industrial artisanal inventions, unlike both Nadalin Veronese and Pandolce Genovese which are secular sweets that were made at home, and which do not require long and with means that are usually not in homes.

Try making "pandolce genovese" also called panettone genovese, it's way easier but it's also somewhere between a biscuit and a cake in consistency, it's not soft and fluffy, but it's really amazing and also fits the Christmas vibe

You forgot to mention the most important ingredient in any recipe you cook for your family, love. i am making home cooked meals for my son and his wife and my two grand daughters who lost their home in the tornados that devastated Ky recently . They have a place to stay but no way to cook there. Every meal I make them is full of love and gratitude for being able to do so. please say a prayer for those who can no longer do this . There is so much loss and sadness this Christmas and much gratitude for what we still have. Merry Christmas , hug your family tight for me .

I use to work for an Italian company and they gave us chocolates and panettone for Christmas one year. the chocolates were really good.

Most ppl in italy prefer pandoro (with nothing inside) or lately there are a lot of pandoro or panettone without raisins or canditi but with cream o nuts, especially artigianali
