Fun fact: spoilage bacteria and pathogenic bacteria are two different things.
Spoilage alone doesn't actually make you ill or sick. It mainly just affects the appearance, smell, and taste of the food (which is sometimes desirable, in the case of fermented food).
Of course, spoiled food is still relatively likely to contain dangerous pathogens too if you don't practice proper food safety.
