I remember making pastry like this in culinary school but for cinnamon rolls & for fruit fillings. Your recipe and process is WAY easier than what I remember! Great job Chef.
Try 1 cup butter, 2 cups of grated cheddar or gouda- whatever you like or have on hand and 1.2-2 tsp of cayenne pepper instead- I LOVE LOVE LOVE making pumpkin pasties with a slice of emmenthaler cheese in this dough, but mini sausage rolls filled with: a sauce made from fried onions, then adding slices of tomato until they are soft and then adding either beef of mutton mince until that is nice and saucy then mixing a tsp or 2 bovril, a small pack of tomato puree and some basil, thyme and oregano in and put that one side. While that's cooling I make some buttery salt and peppered mash that I then mix into my mince and sauce. When all of that is room temp I roll out my chilled pastry dough, slice it in long rectangles that I fill up, roll up slice into mini sausage rolls, paint them with some whisked egg and bake untill golden. I always take a few platters to parties and they are always gone half way through the event. Lol
Just interested Why did you put lemon juice in ? And could you make chocolate fudge cake my kids are always asking me to make it and your videos are so easy to follow.
Small aside to the domestic front and I am wondering why you would want to make a video when your senior management and tasting operative had returned. Other - I am sure I have seen a similar demonstration which is why I shall never make Puff Pastry myself. Not been too successful with the Short Crust variety mind you.

Apparently lemon juice helps the gluten in the dough relax and creates a more tender pastry. Choc fudge cake - ooh yeah, on my list!

I don't think they'd have the mega flakiness of a real croissant - best do the complicated puff method.
