How to Make Non Alcoholic Triple Sec and Non Alcoholic Margarita Recipe

- Here is how to make a delicious non alcoholic virgin triple sec for a virgin margarita that actually tastes like the real thing...
Sometimes you just want a delicious and refreshing margarita without the buzz. With my homemade non alcoholic triple sec, this can actually become a reality! For the best flavor, I’m using a blend of mandarin orange and bitter orange to create a nuanced grown up non alcoholic triple sec that ticks all the boxes and then some.
Alcohol Free Orange Extract:
1.5 oz food grade vegetable glycerin
.5 oz distilled water
1 heaping teaspoon of dried bitter orange peel
5 drops orange blossom water (optional)
Combine water and glycerin until homogenous, then add the dried orange peel and orange blossom water. Stir to combine and let it sit for 10-40 days- agitating often.
Mandarin Oleo Sacchrum:
7 mandarin oranges
White sugar
Begin by washing the outside of the mandarins with just boiled water to remove any wax and scrub with a clean kitchen towel.
Remove mandarin peels and cut into strips.
Remove the bitter white pith with a pairing knife.
Add the peels to a zip top bag and measure the weight on a scale.
Add the same weight of white sugar to the bag and massage the sugar into the peels. Let sit overnight.
Extract the oleo sacchrum by squeezing the peels over a mesh sieve.
Clarified Mandarin Juice:
7 mandarin oranges
5 drops pectinex
Juice all oranges to yield a cup of juice
Add 5 drops of pectinex and let stand for 20 minutes or overnight in the fridge.
Slowly pour juice through a coffee filter to separate from pectin solids.
Non Alcoholic Triple Sec:
6 oz clarified mandarin juice
2 oz mandarin oleo sacchrum
1 oz non alcoholic orange bitters
3 drops orange blossom water
1/8th tsp citric acid
1.5 oz simple syrup.
This should keep in the fridge for several weeks.

Great video! I'm curious to try some zero proof spirits... I just have issues with the shelf life :P ...I was looking at a zero proof whiskey but it was $50 and only lasts 3 months once opened :S ...Pectinase is amazing! If ou segment a bunch of your mandarins, add them to a bowl of water with some pectinase, it will dissolve and remove all the skin and pith.. leaving you with perfectly clean segments, just like from a can but so much fresher obvisouly!
That’s the first thing I did with it! My daughter lives for mandarins and she was eating them like candy.
I have yet to try any zero proof whiskey, but I heard spiritless Kentucky 64 is supposed to be good.
I used some barley tea with a Szechuan syrup to emulate bourbon with pretty great results in my non alcoholic paper plane video awhile back

The other zero proof tequila I tried was terrible, so it’s kind of hit or miss with them- and ratios need to be adjusted when subbing them in cocktails, but it’s a great option to have.

I am always so incredibly impressed by your level of detail to produce high quality drinks. Do you know, I used a half of a lemon and Baking soda to scrub/ clean the wax off my apples before dipping them in candy. It worked so well!

Hey!!Great content!!I wonder if this method can use on non-alcoholic bitters, I think morden mixology need more non-alcoholic ingredient, to treat non-drinker fairly. I really hope we can bring more great drinks to everybody. Booze or not.
Yes, absolutely! Because glycerin is not as strong as ethanol, you will want to increase the volume of ingredients for your bitters, and also let it sit for a longer time. I'd recommend letting the bitters sit for at least a month, up to 2 months. I totally agree with you on our point of mixology advancing with the times. Everyone should have access to a quality cocktail with or without alcohol. Cheers!

Have you tried freezing any of the triple sec? Since NA Spirits have a lower shelf life I'm wondering if freezing distorts the flavor at all.

Hey! Just did a side by side with the frozen triple sec, and the frozen one lost a bit of acidity. If you’re using it for a margarita, just add a touch more lime- or correct with a bit of citric acid
