I still prefer Contestant Amanda's approach to Culinary the most. Also, given the 帮帮卡 aside, nothing is fair... The variety of ingredients the professional chefs have to access... Does the contestants get the same access... In professional culinary context, it's to tests a chefs capability to maximise the flavours within the given ingredients.
Are you implying that the professional chefs have better access to ingredients? That I do not agree. As contestants, you get to choose your main ingredients AHEAD of the show and the chefs won't know what it is UNTIL you revealed it. Before the show, the contestants could get whatever they want. Just look at Bernice. She got pistachio oil, wtf, I didn't even know that existed. On top of that, just look at all the ingredients, many of them unusual, that she brought for the competition. So if you failed to prepare sufficiently as a contestant, you only have yourself to blame. The chefs do not get the same access to ingredients because they can't know ahead of time what ingredients to have on hand for whatever the contestants are going to throw at them. So the best they could do for prep is to get as much ingredients they could that are versatile. They didn't even have a smoke gun after so many episodes and, I think just this season alone, already 2 contestants got their own smoking equipment. My opinion is everything has been stacked against the professional chefs other than their skills, so these advantages to the contestants should be fully utilized, like how Amanda had done, which I think is very strategic and is what I would have done too should I participate in such a competition. For example, I would probably bring a pressure cooker and choose the toughest cut of meat like beef shin such that it is nearly impossible to cook it tender within the short amount of time that the chefs have relative to yours. It's somewhat "dirty" but I call that strategy. What Amanda did is bordering "dirty" and "cheap" like using blue cheese when challenging Chef Pung, but I like that kind of strategizing. It's not much different from my example of using beef shin because it requires a long cook which the chefs can't afford to do so. However, those 帮帮卡, seriously, lacks innovation. Taking away ingredients shows a lack of creative thinking. I prefer adding strange ingredients and forcing the professional chefs to use them in ways that are not garnish. Hence, the use of kiwi by Chef Pung in this episode is quite disappointing. The rules should thus force these chefs to use them in ways that are not usual. Chef Alvin, given miso, he wanted to make miso soup. Although he didn't in the end, but they should have rules to stipulate against using miso to make a soup because that's so uncreative.

Is fair even their Mentee also hold a position as a Executive chef in a Hotel in Singapore. So a Commoner against them considering is fair to have some difficulty for those Experiences Chefs

It's not about the idea of giving the pros a disadvantage that he is calling unfair. It's about the extent of the disadvantage. Taking away too many ingredients is rubbish. If the chef only brought 10 ingredients and with that card taking away 10 ingredients, what should the chef do? Serve the main ingredient with air as the seasoning? And honestly, taking away ingredients is a cheap and uncreative way of doing things. I much rather give them really unusual ingredients and forcing them to incorporate into the main dish. Not miso made into miso soup like what Chef Alvin wanted to do earlier or Chef Pung's use of kiwi as garnish. Taking ingredients away is not creative for the chef as well. 確實幫幫卡有點扯,但畢竟是帶綜藝感的節目,能理解。
詹姆士應該是見怪不怪 習慣了,畢竟他在台灣的綜藝料理節目也經常有這些很扯的行為。
雖然這集這個拿掉10樣食材的事情 確實扯。
另這也是為了考驗在頂端廚師的實力,一定有壓力,不過也見證了師傅們的能力。
