I made nine cookies with my college-age daughters last Christmas - these were my favorites! Vaughn’s Gingerbread Latte cookies were also fabulous. What a fabulous, witty engaging speaker - I agree he should be in more NYT videos!
I made these without the cayenne because I wanted to put them on my cookie plate presents. I followed the advice in another comment: freeze the marshmallows, but chill the dough only minimally. Then after making the cookie, put the cookie sheet in the freezer for 2 minutes before baking. They came out great! Everyone who received them as a guft loved them. Now I want to try it with Cayenne! Thanks, Vaughn!
Love MHC cookies. I have used a MS recipe for years and I like this addition of the frozen marshmallows. Genius. I would suggest that NYT Cooking invests in some half sheet pan (and quarter sheet pans) covers. No need to use plastic wrap. Easy peasy. And, I'm making these for the holidays! Thank you!
seconding what some others are saying about popping them back in the freezer for just a couple minutes directly before baking-or maybe just keep the marshmallows in the freezer and take them out 5 at a time! i found the cookies i shaped last had the marshmallows just melt into the cookie and disappear, even though i had frozen the marshmallows for 24 hours.. they just thaw really fast! the cookies came out absolutely delicious and so beautiful!

I can relate my Leo friend. I'm a Leo Moon and I do love hearth and heart warming cinnamon, an herb of the Sun. It's also an herb of success, which we all know Leo is the best. I just made a cup of Mexican Hot Chocolate the other day to get me in the spirit, this cookie just might make the cut this year. A speedier way to soften butter is to plop it in warm water Same with eggs.. or any cold fridge items for baking. Put them in warm water (if reasonably achievable) to speed up the process
Have to make these just with some Just Egg and plant based butter and marshmallows as I have a family history of Cancer so need to avoid the choline in eggs and estrogen and possible BLV in dairy and the lead (Pb) in gelatin. Thanks for sharing

I think the frosting is in a separate lil container so it doesn't get all over the other cookies.
