    Alternatively to the "coating the back of the spoon" method, I use an instant-read thermometer and cook until the mixture reaches 160 degrees. Also, I put the whole contents into the bowl - including the vanilla beans - before putting it into the fridge. This just give the vanilla bean pods more time to infuse into the mixture. I strain the whole contents of bowl just before pouring into the ice cream maker.

    Yes, you can absolutely use vanilla extract instead of vanilla beans! :)

    That's a great question, Rossio! It's easy to confuse the two, but this recipe is actually an ice cream recipe, since the cream to milk ratio is the same. Gelato contains a higher percent of whole milk than cream if compared to ice cream. In addition, Gelato is usually churned as much slower speeds therefore adding much less air into the frozen mixture than ice cream. This makes the texture different, which is actually one of the biggest differences between the two. I hope that helps!

    That's a good question! You can use the rock salt and coffee can method, but I would highly recommend investing into an ice cream machine. A simple and easy-to-use Cuisinart ice cream maker only costs about $50. :)

    Awwww!!! Thank you so much for the super kind words!! As for getting the picture to be the icon, I've been trying! UA-cam doesn't always give me the option to use the picture! Any tips?

    It absolutely will! Heavy cream and heavy whipping cream are essentially the same thing. Heavy cream has about 36 percent or more milk fat and heavy whipping cream has about 30 percent. However, since you are not whipping the heavy cream, using either one won't really have an effect on the outcome of the ice cream. :)

    (Part 1) Gelato usually has a fat content of 5%-8% depending to the flavor and contains a higher percent of whole milk than cream if compared to ice cream. Gelato is usually churned as much slower speeds therefore only adding about 30% to 35% of air in as opposed to 50% to 100% of air in ice cream.

    I've been watching many of your videos and subscribed since I love them so much, but one thing I notice is that you might want to make your videos more like this one. what I'm trying to say is the icon on this video shows your finished ice cream, giving us an idea before watching. Your photography of the finished food is outstanding and you should put it as an icon on your future videos, if possible :) Please don't stop making cooking videos, they're one of the best and very straightforward

    @menimexxmakeup - It really depends... some ice cream has egg and some ice cream doesn't. It just depends on who is making it! :)

    @MsOmnom2011 - The icy texture that you get could very well be due to the ice cream maker that you are using or excess water in your recipe. Personally, I've never had to use gelatin in my ice cream but I know it will absorb some excess water in the ice cream, which may help with minimizing large ice crystals. However, if you have a good ice cream maker and a good recipe, ice crystals shouldn't really be an issue. I hope that helps and I wish you the best!

    (Part 2) Lastly, gelato is usually served at a temperature of 7 degrees F, whereas ice cream is served completely frozen at -10 degrees F. This makes the texture different, which is actually one of the biggest differences amongst its frozen peers. I hope that helps!

    hi I really want to achieve that good kind of ice cream texture whenever I make it there seems to be large icy texture, how can I avoid that? some say I should add 1/8 tsp gelatin does that really work? I really want to achieve and maintain the good texture of ice cream even if its been in chiller....I want to start my own ice cream business you see....need your advice :)

    You can get heavy cream at any of your local grocery stores. Both heavy cream or heavy whipping cream will work for this recipe. I hope that helps! :)

      As long as you store your homemade ice cream in an airtight container in the freezer, it should be good for about 2-3 weeks. Mine never lasts for more than a week (because I eat it way too fast)! Ha!
