My bf is Egyptian, he thought me to eat so much healthier. Also a lot of doctors recommended Mediterranean diets for the raw veggies, limited fats and hearty healthy meats. I love this type of cooking. A lot of diets lack raw veggies and fruits. Thanks for sharing

This looks delicious and I'm looking forward to making kofta for us soon this summer! I also add sumac to many recipes though it might not call for it. I just love it, especially on red onions when we grill for kabobs and Shish Tawook!
If you wring out the juice from the onion in a cheesecloth or sieve the kofta mixture should hold its form more readily, meaning you won't need the bread to act as a binder. Also be sure to use fatty mince (or add additional fat if not).
