- Our Bahamas Adventure continues in Harbour Island. We head out for an afternoon of fishing and wind up catching a few mahi including a big bull late in the day. The following morning we clean the mahi at Romora Bay and then head to Star Island a few miles away to cook the mahi on the beach!

Man, that just looks the business!! White sand, crystal clear blue waters, Bonefish inshore, Mahi-Mahi offshore! Friends, Family and food and Island time continues!! I subbed to Jocelyn's channel a few weeks ago, and am loving it, and damnit Nick, while I'm stuck here on the Canadian Prairies you're making me dream of life at a slower pace in a warmer location!!

Back in Panama we would make bite sized chunks, marinate them in beer batter and deep fry. Nothing like beer battered deep fried Mahi. Soooo good. Nice boat too. Smoked Marlin is amazing too!

Seafood chef in the V.I. from the 80s here. Cooked mahi and many others on grills. Didn't have traegers back then so had to improvise to keep blowing sand off the meal. Never had a bad one. Awesome memories. Cooking and partying in J. LILLY Compound. Priceless. Never been to the bahamas but they all start to seem the same after a while.

I just wanna say you truly living my dream. Im up in the lowcountry GA but i just got my first boat and its a war eagle 1542. Cant do no offshore but ive been running it through the inlets catching trout and reds. Hope to be on your level one of these days and be able to take my family on a nice 42 foot freeman.

You should load up on Rescue Disposable Fly Traps for your next trip. I bought a couple of these at either Lowes or Home Depot. You just hang them away from where you want to be (they smell terrible) and add water. They will be loaded with THOUSANDS of flies before you know it. They work better than anything I have ever seen.

So glad your taking those babies with you on the boat and on fishing trips. As I've told you in previous comments. I was on the boat in a laundry basket with a umbrella for shade when I was 2 weeks old. I'm now almost 81 and wouldn't trade those days I could start remembering them until I left South Florida in 1964. Should have never left the Keys. Keep taking those kids even if you don't have charters or other friends with you. Keep it up young man.

Cooking Tip :))) Rub the fillets down with Mayo first then season up.. Trust me
We went out about 5 miles from Corpus Christi one time and found a huge school of chicken dolphin (Mahi) right at the surface. Was literally dropping the line in and pulling them up. No reeling at all. Came back with 2 coolers full to the rim. Probably never happen again.

hey man one thing u need to get is those bonito tubes or tuna tubes to keep those bigger bait fish alive so you can get those super big picky tuna too bite an I think would be sick to use an have.

Great video nick! What knife sharpener do you recommend for those kinds of fish? My knife tends to get dull real fast and I haven’t invested in a wet stone or a sharpener yet
I use a wet stone most the time
You need to use a honing steel in between cuts. The knife will remain sharper longer, and the metal will last longer as wdll
The thinner the blade the longer it will remain sharp, however to have a thin blade it would have to be made of high quality steel. The mixture of steel must be such that it doesn't stain, but is soft enough to sharpen. This can if you aren't lucky and haven't done your homework, lead to purchasing a number of knives before you find one that is suitable.
