How to Make Corn Ribs | Corn Ribs in Air Fryer

  • Corn ribs are the latest TikTok food trend, and I couldn't help myself from making them because I love corn so darn much. Never mind that it's the dead of winter and corn is definitely not in season. The hardest part of making corn ribs is in the cutting, so please be careful. Unlike how many tutorials show, I prefer to cut the length in half first before proceeding to cutting into quarters. This makes it more manageable and safer, in my opinion. I also absolutely love Mexican elote-style street corn, so I applied those flavors here with plenty of mayonnaise, cotija cheese, cilantro, and a seasoning oil that includes chili powder, garlic powder, and smoked paprika. I used my air fryer, but you can definitely use your oven (I would maintain the same temperature but increase the time to 15 to 20 minutes or so).
    How to Make Corn Ribs in Air Fryer
    3 corn cobs, cut (carefully!) into 8 pieces
    3 tablespoons neutral oil
    1 teaspoon smoked paprika
    1/2 teaspoon garlic powder
    1/2 teaspoon chili powder
    Salt and pepper, to taste
    1/4 cup mayonnaise
    1 to tablespoons of chipotle hot sauce (or the adobo sauce from chipotle pepper can)
    2 to 3 tablespoons cilantro, roughly chopped
    2 to 3 tablespoons cotija cheese, crumbled
    Carefully cut your corn. Set aside.
    Make the seasoning oil: In a small bowl, combine oil, smoked paprika, garlic powder, chili powder, salt and pepper. Mix.
    Brush corn with the seasoned oil.
    Space out corn ribs in a single layer on air fryer tray (I did this in 2 batches). Cook at 400F for about 12 to 14 minutes, flipping once halfway through.
    In the meantime, make the chipotle mayo and garnishes: In a small bowl, combine mayo and chipotle hot sauce. Mix and set aside. Chop cleaned cilantro and put into a small bowl. Crumble cotija cheese and put into a small bowl.
    After the corn ribs are cooked, brush corn with chipotle mayo (be careful as corn may be hot). Sprinkle on cotija cheese and cilantro. Serve with extra mayo on the side. Enjoy!
