Its tough but with some practice you'll get used to it. its basically using your index finger for zoom and your pinky finger for focus (depending on the layout of your lens)
Don't think he means doing them simultaneously. When I've used zooms it's a quick zoom in or out then back to the focus ring. The zoom ring and focus ring won't have matching turning ratios and with some lens may not turn in the same direction. I think tamron and nikon their zoom lenses turn to the right to zoom out.
