Between watching you plot to aggravate Uncle Roger to provoke him to respond to you, watching you play the bagpipes, and Simba the kitten, all with that heinous drunken fried rice in the background, this video is almost fan service overload lol. Loved it ❤

I mean to explain why was Babish with that kind of attitude when he "fingered" the rice, is because that was originally from a series called "Botched *by* Babish" (my bad), it's kinda different from the usual "Binging with Babish" where Andrew's expression can sometimes be a bit... outrageous.
I like to imagine that Babish has to contain all of his chaotic energy throughout the shooting of "normal" episodes, until it spills over in one of these extra episodes.
To me this just illustrates the decay of his channel. I liked Andrew, I even have his book but to be honest, his main series was good until it started to be a vehicle for sponsorships and lazy simple stuff thats just mostly uninteresting. His basics series was a good idea but it lost it's way. The turn into "culinary universe" wasn't a bad idea but doesn't really work on single UA-cam channel. Collaboration with Sohla was missed opportunity. Alvin is ok. Most of the rest is just bad "content". The only really good thing on his channel in the last two years was Pruébalo with Rick Martinez, which definitely deserved own channel and I would pay for more.

For me, the "botched" episodes are a good bit of lighthearted fun and silliness every now and then. But I agree, the cooperation with Sohla was great and way too short.
I think Babish have used some "special" herbs here. By the way a a workmates Chinese mother use black vinegar in her fried rice, i think it is some regional thing from china after all china is big and even small countries as Sweden have regional version of traditional Swedish food.
I have a spiced black rice vinegar I use sometimes. Mandarin peel, bean paste, ginger, some spices (clove star anise etc). The vinegar itself tastes "fruity" it has more body than a normal rice flavor vinegar, the other ingredients add to that. a small amount can add a nice kick. Don't use too much though.

yeah but our black vinegar is more liquid not thick when you put it around the wok it will evaporate quickly and give you full wok hay more smells not sour taste
Italian fried rice: 1. Cook Guanciale or Pancetta (if you can't get Guanciale) in a pan to render out the fats, remove the Guanciale when its crispy and drop unseasoned and beaten eggs into the pan. 2. Fry off the Eggs a bit before dropping in Garlic and Shallots. 3. Add Rice which was cooked in Saffron Water infused with Garlic and Ginger and left overnight. 4. Stir fry and season with Fish Sauce or Flor de Garum/Liquamen if accessible. Add Black Pepper and a teaspoon of Thyme. You may add Salt if you like your fried rice saltier but Fish Sauce and Guanciale are already quite salty. 5. Add back the Guanciale and some Chilli Flakes if you like heat. 6. Line a baking tray with parchment paper, Grate a handful of Parmesan and mix with half a teaspoon of Dried Basil. Lay the grated Parmesan flat on the baking tray and bake at 180 Degrees Celsius for about 6 to 7 minutes or until it turns golden brown and you get a Parmesan Cheese Crisp. This mimics the Keropok or Crackers that many South East Asians would have accompanying a fried rice dish. Also, in HK Cafes (茶餐厅) there are many forms of cheese baked rice dishes and the pairing of cheese and rice is actually really good and quite common. Plate by putting the Fried Rice on the plate, insert the Cheese Crisp off to the side into the rice, add some finely chopped Scallions for garnish. Simple.

One thing I feel I should mention is this is from a series he does called WTF "What The Fridge", where he looks in his fridge to come up with ideas on a dish to make based solely what he has in the fridge, it's meant to be more light-hearted and goofy, similar to his Botched by Babish videos, where his Binging with Babish and Basics with Babish are usually a bit more serious. Also, it's basically an off the cuff, on the fly, make as he goes along sort of thing, like you said near the end. Really, it's just more meant for entertainment purposes.

Congrats on the 300k James! As for the dish itself, if you want to make an italian fried rice, just slice up some italian sausages and use that as the protein. There's an italian twist to an asian dish that would actually work.

That dish was like when i paint sometimes i try to make a color without reference and i keep adding colors and end up with a version of gray. It's a very nice gray but it's gray. That's the nicest thing i can say about it.
The original video was called WTF(what the fridge), or something like that. It was meant to be really off the cuff. See what was in the fridge and come up with something. They had left over meatballs and white rice from God knows when. Italian fried rice was never the original idea. Personally, I think the recipe was going alright until the balsamic vinegar showed up. Then it went downhill.
I love the bagpipe playing, was not expecting it, I love bagpipes. Also, the kitty is cute - I see the distrabution system decided it was your turn to get a kitty. Simba is adorable. That "fried rice" is just...I can't picture how the balsamic vinegar could work with the rest....not with that flavor. Babish is making my Italian ancestors cry.
I have binged Babish plenty of times, so I know a thing or two. I'll start with the tattoos. I don’t know the backstory behind the hammer, but the one above it is based on the Kodak logo, which is based in Babish's home town of Rochester, New York, and serves as a reminder not to get stuck in his ways. And the last one is his whisk, specifically one of his trademarks: the tiny whisk. And Babish doesn’t really act like this in Binging and Basics; he’s just like this during unscripted videos, like What The Fridge, the irregular series this is from. He’s more like Alvin in the previous video. This series started as a means to make a video in a crunch, which was probably one of the early signs he wasn’t in a great place. Though there’s further context to this video that didn’t start my understanding relationship with Uncle Roger on the right foot. This video came off multiple themed videos around fried rice, a couple even having J. Kenji Lopez Alt, someone who, to put it mildly, doesn’t like Uncle Roger. The videos showed the versatility in fried rice, how you could vary the dish based on the ingredients at hand. They inspired me to make my initial attempts at making fried rice. Going from that to a very critical video of Babish, even this is probably one of the strangest things he ever made, made me not want to have anything to do with Uncle Roger. Even now, if I'm looking for an Uncle Roger video to rewatch, I won’t watch this one.
So Botched With Babish is born out of a possible slumped mood one time? Uncle Roger is hilarious but his constant need to jab at Jamie Oliver in videos that are nothing related to him annoy me a lot and a huge reason his content isnt something on my everyday watch list

babish is more erratic in this video because it's part of a series where it's not scripted and more candid as they just make stuff with whatever they have in their fridge so he's just improvising and having fun. This isn't a tutorial and he's not saying you should make this. He's just having fun

In Uncle Roger's hometown, Malaysia there are lots of Fried Rice variety Type of Dish + Standard Fried Rice. Such as BBQ Pork Fried rice, Tom Yam Fried Rice and Seafood Fried Rice(just some random seafood mixing in when you fried the rice). If I would like to make Spanish Fried Rice, I will make a Fried Rice with Paella ingredient since both of them are pretty similar.
I hate when chefs cringe at fusion food, if it tastes good, then that's all that matters. And this looked really good, and I think will taste good as well.
Fusion should be done correctly lol , you build upon the base From your comment I can just add chocolate coating and all and mix it with poop and tell you yo it's a chocolate cake , have it Will you ignore the foul smell and eat it based on the looks?

@sayanama this chef isn't rely cringing at fusion foods, but you have to admit, all those ingredients were strange together, and then the added lime must have done something weird to the flavors as well.
Babish does a lot of videos that are very clean and professional (most of his tutorials are like that), and then occasionally he'll do a series like "botched" where he just acts totally chaotic and unhinged. I'm guessing this video is in that latter vein.

I have actually seen babish say something was bad on his channel before. And other than adding more acid, I don’t actually see why these ingredients wouldn’t taste good together. The format is meant to be getting rid of leftovers basically, so throw everything at it and see what sticks. Many a tasty meal in my growing up years were essentially just leftovers turned into fried rice
I admit I'm not a chef and do pretty much all my meals through Tovila meal kits or Hello Fresh ones, but even watching this "fried rice" (I say that loosely) is just a total mess. It's like the guy wanted to try and do a combination of two types of foods (fried rice and some pasta dish), but didn't really experiment or try to think about what could be a good combination between the two dishes. It would've helped to try and do some more research. And yes, it does feel like he was just making stuff up like he went along with it. Balsmic vinegar never should be in rice. This whole dish felt like a mess and poor experiment without any major foresight. Also, congrats on the new kitty! Simba feels like a perfect name for him!
Long time ago I read in the Reader's Digest magazine a story from one of the readers. The lady found her grandmother's handwritten cook note book, where among many great recipes were gems like "Green tomato compote recipe" that ended with a sentence "... and continuously stirring pour into the toilet."

I had a rescue dog growing up and she was a sweetheart, so I have a soft spot for rescues and strays - possibly I self-identify with them a bit too much! 😅 Hope that life has been good to you recently 💙
This was making something out of what was left in fridge after like thanks giving or something the reason he made mistakes is because it wasn't at all planned out which is why he was a bit stressed at times. He will also admit when things don't work he has episodes called fails with babish where he tries to fix the mistakes. He is normally very good and a lot calmer.
16:00 check out Tasting History with Max Miller, he’s put out videos on how to make a “quick garum”, something you can do in your kitchen, and a traditional method: salt and cut up whole fish (including guts) in a jar in the summer sun for a few months…. Yes it’s as gross as it sounds, but the final product is a shockingly clear golden liquid
@@ChefJamesMakinson as I understand it he’s not professionally trained, he just enjoys finding old (sometimes ancient!) recipes and trying his best to replicate them, and learning & sharing the history around them. So I watch for that content and don’t really worry much about his technique, but I have seen him do some things that wouldn’t fly in a professional kitchen (like wearing a ring while prepping food.)

I've been to the Algarve coast two years ago where I saw the ruins of a Roman agricultural estate close by the sea. Besides growing all kind of things there they also had tanks to make salted fish sauce, they also had salt gardens. The fish paste was exported to Rome where it fetched higher prices, supposedly.
Some UA-camrs are honest and tell us when their results aren't good (they even test recipes and concepts exactly with that intention). Emmy and "How to Cook That" are two examples. Helen Rennie is quite honest too.

I love the bagpipe playing, was not expecting it, I love bagpipes. Also, the kitty is cute - I see the distrabution system decided it was your turn to get a kitty. Simba is adorable. That "fried rice" is just...I can't picture how the balsamic vinegar could work with the rest....not with that flavor. Babish is making my Italian ancestors cry.

I have binged Babish plenty of times, so I know a thing or two. I'll start with the tattoos. I don’t know the backstory behind the hammer, but the one above it is based on the Kodak logo, which is based in Babish's home town of Rochester, New York, and serves as a reminder not to get stuck in his ways. And the last one is his whisk, specifically one of his trademarks: the tiny whisk.
And Babish doesn’t really act like this in Binging and Basics; he’s just like this during unscripted videos, like What The Fridge, the irregular series this is from. He’s more like Alvin in the previous video. This series started as a means to make a video in a crunch, which was probably one of the early signs he wasn’t in a great place.
Though there’s further context to this video that didn’t start my understanding relationship with Uncle Roger on the right foot. This video came off multiple themed videos around fried rice, a couple even having J. Kenji Lopez Alt, someone who, to put it mildly, doesn’t like Uncle Roger. The videos showed the versatility in fried rice, how you could vary the dish based on the ingredients at hand. They inspired me to make my initial attempts at making fried rice.
Going from that to a very critical video of Babish, even this is probably one of the strangest things he ever made, made me not want to have anything to do with Uncle Roger. Even now, if I'm looking for an Uncle Roger video to rewatch, I won’t watch this one.
So Botched With Babish is born out of a possible slumped mood one time?
Uncle Roger is hilarious but his constant need to jab at Jamie Oliver in videos that are nothing related to him annoy me a lot and a huge reason his content isnt something on my everyday watch list
@@Thomasmemoryscentral I don’t know if Botched has any further motivations beyond just correcting past recipes, and it probably wasn’t made out of "I need to make a video in the next 24 hours; what can I do?" Even him, I can’t say would panic buy an entire wheel of Parmesan.

babish is more erratic in this video because it's part of a series where it's not scripted and more candid as they just make stuff with whatever they have in their fridge so he's just improvising and having fun. This isn't a tutorial and he's not saying you should make this. He's just having fun

In Uncle Roger's hometown, Malaysia there are lots of Fried Rice variety Type of Dish + Standard Fried Rice. Such as BBQ Pork Fried rice, Tom Yam Fried Rice and Seafood Fried Rice(just some random seafood mixing in when you fried the rice). If I would like to make Spanish Fried Rice, I will make a Fried Rice with Paella ingredient since both of them are pretty similar.

In general, I agree, but I'm cringing at the combo of pesto, celery and balsamic - and considering that extra moldy lemon, I'm kind of suspicious of those meatballs, too.
@sayanama this chef isn't rely cringing at fusion foods, but you have to admit, all those ingredients were strange together, and then the added lime must have done something weird to the flavors as well.

Babish does a lot of videos that are very clean and professional (most of his tutorials are like that), and then occasionally he'll do a series like "botched" where he just acts totally chaotic and unhinged. I'm guessing this video is in that latter vein.

I have actually seen babish say something was bad on his channel before. And other than adding more acid, I don’t actually see why these ingredients wouldn’t taste good together. The format is meant to be getting rid of leftovers basically, so throw everything at it and see what sticks. Many a tasty meal in my growing up years were essentially just leftovers turned into fried rice

I admit I'm not a chef and do pretty much all my meals through Tovila meal kits or Hello Fresh ones, but even watching this "fried rice" (I say that loosely) is just a total mess. It's like the guy wanted to try and do a combination of two types of foods (fried rice and some pasta dish), but didn't really experiment or try to think about what could be a good combination between the two dishes. It would've helped to try and do some more research. And yes, it does feel like he was just making stuff up like he went along with it. Balsmic vinegar never should be in rice. This whole dish felt like a mess and poor experiment without any major foresight.
Also, congrats on the new kitty! Simba feels like a perfect name for him!

Long time ago I read in the Reader's Digest magazine a story from one of the readers. The lady found her grandmother's handwritten cook note book, where among many great recipes were gems like "Green tomato compote recipe" that ended with a sentence "... and continuously stirring pour into the toilet."

This was making something out of what was left in fridge after like thanks giving or something the reason he made mistakes is because it wasn't at all planned out which is why he was a bit stressed at times. He will also admit when things don't work he has episodes called fails with babish where he tries to fix the mistakes. He is normally very good and a lot calmer.
16:00 check out Tasting History with Max Miller, he’s put out videos on how to make a “quick garum”, something you can do in your kitchen, and a traditional method: salt and cut up whole fish (including guts) in a jar in the summer sun for a few months…. Yes it’s as gross as it sounds, but the final product is a shockingly clear golden liquid

@@ChefJamesMakinson as I understand it he’s not professionally trained, he just enjoys finding old (sometimes ancient!) recipes and trying his best to replicate them, and learning & sharing the history around them. So I watch for that content and don’t really worry much about his technique, but I have seen him do some things that wouldn’t fly in a professional kitchen (like wearing a ring while prepping food.)

I've been to the Algarve coast two years ago where I saw the ruins of a Roman agricultural estate close by the sea. Besides growing all kind of things there they also had tanks to make salted fish sauce, they also had salt gardens. The fish paste was exported to Rome where it fetched higher prices, supposedly.
