Love your laid-back, Canadian style of cooking! I'm of central spine-of-N.America, Kansas /Saskatchewan 'Mennonite" stock. I loved my mom's similar milky corn-chowder, hence picked this up. She used bacon bits, maybe crisped up a bit in advance.
