Take one cup of Urad Dal (the one you see in white, not black) soak it for at least for 4 hours, then go grind it. Use a Idli grinder and not your home mixer grinder. Then take 2 cups of Idli Rava (also called bombay rava) wash it well and mix it with the ground idli batter. You will have to leave the batter there for 6 hours, when you see it in the morning it will bloat up. That's the sign of a proper idli batter. Do not refrigerate. When you are ready to make idlis in the morning, put them in the container, let it steam for 7-10 minutes. But you can always check if it's cooked by inserting your butter knife to check nothing sticks. That's it, you are done.

You can use normal tap water to wash idli rawa, no soaking required. Some people use idli rice instead of idli rawa. I believe idlis are softer and tastier with idli rawa.

I tried these idles ,it was so soft and nice 'n' fluffy.It was very light.
