The sundakai on its normal form would taste like a crunchy tiny brinjal but once dried and roasted it gives a bitter taste which gives a unique smell and tartness to the vathakulambu. Sundakai is a very healthy vegitable.
Our ancestors/ elders had the habit of preserving seasonal/ excess vegetables in the way of pickles or vathal (sun dried vegetable) or Vadam (type of papad with sago, rice fried in oil) for later use in off season or immediate use from pantry during rainy season.
So turkey berry, manathakkali black night shade berry, ladies finger, brinjal, cluster beans are soaked in salted buttermilk and sun-dried and used in kuzambu after frying in oil. Vathal kuzhambu gets its name as anyone of the vathal are added and also the kuzhambu is made thick by cooking for long time and reduced (vathal) in quantity.
Try the famous DVP bakery's cashew nut cake once. The taste is unique and it's more than 50 years old recipe. You should try from the DVP near mini tirupati temple.

Loved to see the owners' care towards the 1) Local community, especially women 2) Attention to nutrition in the form of steamed vegetables 3) Ensuring higher profit margins to the milk suppliers. They don't have to do it, but they do it. Vellore is the land of the innovative. I've heard so many stories of it in my childhood as my grandmother trained there as a doctor.
Others would have asked for a local culinary expert with good translation prowess to accompany them on a outdoor vlog to enhance the quality and content ... ..and here we have kripal sir......Very few people can transcend this barrier... Hats off

I am from Karnataka and it was way back in 2008-9 that I tasted Kharakolumbu for the first time in Chennai and I instantly fell in love with it. It's sour, it's hot, it's spicy and man nothing comes to any closer to that taste. Tamilains have perfected that and I would go there just to eat that dish again and again!!!

Great episode! Just enjoyed watching you eat Tamil saapaadu. The turkey berry(Sundakkai) is usually crushed enough so that it splits into two, soaked in a brine of curd and salt and dried in the sun. Once it is dried it can be deep fried and used in vatthakuzhambu or just to eat with curd rice. At that point it loses the bitterness to some extent. Very beneficial to good health!

I have tasted rasam vada so many times, including in some of the bars, but never have distinctly relish the way, you did, Kripal. The next time I savour the rasam vada, I would certainly do it your way, fully concentrating. Nice journey.
Vathal kuzhambu it is also known as. Vathal means dried veggies like turkey berry, black night shade etc. During raining season this is made since veg are in short. We Dry avarakkai, bitter gourd is also used to make vathal kuzhambu and i love it

It is far from Vellore CMC towards Chennai.May be due to this you might missed it.

I used to visit Vellore regularly, and have my break fast and meals at Alankar, near old bus stand, on katpadi road. Very famous for hot idly/sambar and dosai varieteis , and tasty meals, during 1969-85. Had to wait to get table due to heavy rush in mornings and noon. Very famous hotel then in Vellore.
Even that Rasa vade will be impressed with your way of explaining and enjoying it... 😍

Turkey pea adds a special taste, dried turkey peas are called "vatral" means dried things deprived of water. Turkey peas are good source of iron.
Sundakkai OR turkey berry is basically 'kasappu' OR bitter in taste. Vatral is dried buttermilk soaked Sundakkai in sun. The dried Sundakkai is fried and added into to the 'vatha Kulambu'.
