I followed your recipe and used ground beef. I am not a pork eater so it’s nice to see you using beef, since I know many Chinese dishes use pork. I will admit that I put a tablespoon of oyster sauce in it, just because. I love mapo tofu SOOOO much and your recipe definitely is delicious. I think it is very important in this recipe that the sauce be very full-bodied and packed with umami. Otherwise, a thin flavored sauce won’t work with plain rice (as I’ve learned from making it in the past with various recipes).
I recently adopted a vegetarian diet but mapo tofu is one of my all time favorite dishes! I looooove the idea of making it with mushrooms and will have to try that!!
This reminded me of food wars when kuga and Souma were competing in the school festival

Ground pork is the best thing in mapo tofu. Unless you don’t eat pork please use it. I’ve made it with both ground beef and ground pork and pork is superior. I also think that what a lot of the restaurant use.

i took a exchange year in Japan, and when asked about their favorite dish, the Chinese students would always say mapo dofu 😂 i do wanna try it someday, even though i usually dislike tofu
Honestly you don’t even have to add the tofu. Of course people might say that’s heresy of the highest order or something it’s your food. I’m not a fan of tofu either but my Asian dad has made multiple times and it’s really good. I do eat around the tofu tho. Or just only out a little bit in.

Why did you start cooking with sesame oil? It has a very low flash point and should only be used to finish of dishes. Unless sesame oil is totally different in America?
I guess it could be differently processed to have higher smoke point? Idk.
Smoked flavor is a staple in American dishes so it’s probably intentional.
It adds to the flavor. At least in my experience and sometimes it takes over the whole flavor!
Never seen someone start with scallions either in asian cooking
I might be wrong. But i think there are 2 types of sesame oil.
One is the probably most famous, which is the toasted sesame oil.
The other is raw pressed sesame oil which i believe it can handle heat better.

Can you use ground bait?
don't put sesame oil first, put it last, you'll lose all that flavour anyway and it's pricy
neutral oil or lard is just fine
A few restaurants by me stopped putting meat in the mapo tofu.

it's necessary, the entire dish of ma po tofu is just those speciall fermented beans, chili and szechuan pepper, everthing else you can swap out

That Zhajiang Fried soybean/vegetable paste looks great but I can’t find a seller online, would Korean jajang paste be a good substitution?
Looks delicious definitely gotta give this a try. I’ve made super basic and Americanized versions of the dish and it still came out great but I’m gonna try this one. Idk if I can get all these ingredients tho😂

@@sfr2107 I more or less used ingredients that do the same thing but aren’t authentic. Mostly a lot of substitutes and some spices/ spice mixes I didn’t even use. It’s been a while since I made it so I can’t name everything off the top of my head but I mean the produce, meat, and spicey sauce he used I had.
@@rage_tv4493 well I made it work with what I had on hand, delicious for a knock off but deeeefinitely a knock off lmao. I'd make it as a regular dish but I'd still want to try an authentic version at least once
