I must be honest in saying I would be eating/adding some of those veggies used to make the stock back into the broth with just the carrots and celery. This made sooo hungry watching. And the cat meowing was priceless in adding to the atmosphere inside that beautiful cottage. Brilliant as always ❤
I really love how some of these Recipes have stood the test of time.... Almost 200 years later, and this exactly the same that so many people make this Soup today... Also, such an important step that was done here is letting the Veggies soften up & caramelize a little over the heat, before adding the Broth... Great job Chef Justine!
Yummmy.....this is so good during cold weather. With lots of onions, it is like onion soup to me with little of carrots and celery. Onions are very good for the body.
I am a soup addict!! All kinds Chicken, vegetable, beef 'n barley, clam chowder, creamy tomato, etc. Soup & sandwich is my go to lunch, especially in the winter 3:34 !! 🎉 Meow to Mish Mish from my funny Valentine! 🐈

Vegetable Soup (The Cook's Dictionary, 1830, London) The stock: 3 large onions 3 carrots 2 large turnips, or 4 small ones 0.25 pounds of butter 1 stick of celery 2 slices of bread, toasted 8 cups of beef stock OR the water that a hunk of beef has been boiled in White pepper & salt to taste A tied bundle of fresh rosemary, thyme and parsley For the soup: 2 sticks of celery 1 carrot Prepare the stock by chopping up all of your veggies. Throw them into a deep stock pot with butter. On medium high heat cook the vegetables while stirring frequently until they are tender & the onions are translucent. This can take at least 10 minutes. Once tender pour in the beef stock or "boiling water" (the water that a hunk of meat has been cooked in), the toast, herbs, celery, salt and pepper. Cover and cook on low heat for 4 hours. Be sure that your lid is air tight. Once 4 hours has passed pour through a fine cloth or a mesh strainer to separate the stock from the solids. Press the cooked vegetables through the strainer to get as much of the stock out as is possible. Into it add diced carrots and celery and return to your heat. Cook on medium heat for 10 minutes then the soup is done. * This is the original recipe cut in half
Autumn is approaching. Is there no better time to enjoy a nice hot soup as the first nip of frost is in the air in the coming months? I'm SO making this! Amazing as always, Justine. 🙏
@@EarlyAmerican thank you Justine! Doctor appointment and lab work, lol. I'm fine, just check ups, but lots of bloodwork in the past 2 weeks. You just made me settle right down tonight.
I feel like all of us in this community share a love and respect for Justine, Ron, and Mish Mish. This is truly something I count on to help calm the soul.
Merci Merci Cest tellement incroyable de vous regarder faire ces recettes. Le son est parfait. Jai toujours hâte a vos nouveaux videos. Salutations du Québec 🌹
Looks delicious and I see hints of fall in the cozy cabin as well, Justine! Cannot wait to see the C & C either tonight after Bible study or in the morning. Be blessed, Mrs. Rayfield! xoxo
That looks so yummy! I wish we had smellovision! The only change I would make is to keep all of those veggies in the soup to make it heartier and more filling. ❤
LOVED the chickens in the start of the video! I had 2 chickens of my own when I was a kid & they looked exactly like these! They were hand tamed & let me carry them around like babies! R.I.P. “Red & Zebra” 💔😢🐓🐔
Looks good but yikes I would want all the other veggies in that soup as well. Interesting that all they cared about back then was the broth!😮 Love this channel ❤❤
How amazing this looks! Soups are not a thing i like in the summer weather but the impending onset of fall makes this the PERFECT time for this recipe and what a cute video with your little furry mish upside down! Thank u for making relaxing beautiful videos!
I do love your videos. They give us a snapshot into life long ago, without all our modern goodies. It might be interesting to make a video of how the housewife/cook did the clean-up after cooking a hearty supper or dinner.
The soup looks delicious, especially the broth! I love the fact that you used bagels as your thickening agent in the broth!! I would eat that soup on a chilly night!!
The soup is well timed since we are on the verge of changing seasons...it looks delicious and judging by your taste test, it must taste delicious too! A wonderful video once again...thanks 🥰
Oh Justine, this looks delicious ! Perfect as the Autumn weather approaches. Nothing like a good bowl of soup to warm the soul. Thank you for sharing, blessings always.
Justine, you truly have a gift. These vids are beautiful. The content, the color, the closeups, the distance shots. They all come together better than a Food Network or History Channel production any day of the week!
One of the few videos I don't want to watch on 2x speed. Thanks for sharing your unique life. We would all do well to learn how to live like this again. I'm working on being more self- reliant each day. Just started my garden and I'm learning other skills. Thanks for inspiring me. All the best to you
I've never seen a bread toaster like that ( really cool ) and I've never seen anyone add crusty bread to their broth before. Very interesting. I wonder if there is a reason other than flavor. Such a cute cabin. Love the cat standing on the chair looking out the window and the chickens meandering around the yard. Such a calming video.
I know the life has been cooked out of them but I can’t ever bring myself to discard the veg after making broth. I think they are delicious. What you had prior to straining would have been my soup ☺️☺️☺️
Hahahaaa, upside down black bat kitty, my Beastie does this, he's my biggest baby. I remember my Grammy using everything in my Grampy's garden, it's how we lived. He did the gardening and fishing and shellfishing and repairs, she took care of the shopping for mostly dry goods and cooking and inside the house. And the flower beds. We lived off the land and sea, we'd have 3 piglets every spring to raise up for butchering in the fall. I'd go across the street and to the marsh to a house where they had chickens to get eggs. I was sent out to get veggies and bring them back to the house for supper, we call it supper here too, the later meal. Delicious homemade food and very little preservatives or additives. Old Scool cooking.
@EarlyAmerican. Hey Justine. I don't know if you guys have answered these questions in a past Q&A, so I apologize, but: 1. Why did you choose the early 19th century. Is it your favorite time period? 2. Did you guys ever get into reenacting or theater? 3. How much do you spend on your costumes and upkeep? 4. Is there a reason you don't talk during your videos? 5. Did you build the cabin you guys use and is it close to where you live? 5. Did you plan on making an ASMR channel? Haha. (The most I ever saw you talk was when you complained to Mish-Mish about having to spend 2 hours stirring to prepare a cake) Please don't feel like you need to answer all of these, I just wanted to throw them out there. Keep up the great work You guys are awesome. I always look forward to your relaxing videos.
I have a huge cauldroon but I put candy in it. Goodies lots of goodies. I made stew kinda like you do yesterday. I put a little beer in it too. So good. Only veggies are left. If I was rich I would come and visit help the 1790 home. Id buy me a new home. Mine is in the 100th cenrury and my car too. Lol love you two so much
Ah yes...time for fall to start soon so this'll be perfect to fill up n heat up. Just need some fresh extra custy bread to go with! Thanks for the vid, needed it with all the craziness going on in the world.
After watching this, my first thought with the fried vegetables and beef broth....thats a hardy stew. As she continued, I realized this soup was probably a fine meal in 1830. Good video, makes me want a slower life with meaning.
❤ I often wonder where do you get the cookware that you use in these videos I would love to have my own cookware just like that. Looks delicious as usual
In a world that moves at a million miles an hour your videos slow down the madness. For that I’m grateful
Well said. Agree 1000%.
Looks like the kitty is enjoying married life.😊
Well said ❤
Sometimes you just need a calm cooking video to relax
Oooooh… I like the way you put that. ❤
The house. The fire. The cat. Everything that I love!!!❤
I thought Mish Mish was one of the chickens 😅😽
As hard as it would be - and it is hard work to live like this 24/7 - I would happily live this life.
@@juliethompson5301the chickens cosplay costumes were on point.
the turnips are the best part!! ugh....i would have kept all those veggies and thrown them in and added potatoes too
That looks mighty tasty. Got a kick out of Mish Mish laying on the table upside down.
Mish Mish was hamming it up for the camera😄 He made a perfect Halloween decoration lying next to the pumpkin. He knows what he's doing😉

Me too!
Same. My parents lived through the depression. That many veggies would never be used for broth but not eaten.
I love how Mish Mish is laying on the table like "That's my pumpkin!"
Mish Mish is such a dreamy dream-boat! Love the cauldron and the pumpkins, your dress, everything 🧡
I absolutely adore Mish-Mish in this video! Such photogenic character and truly enjoying the spotlight!!!

Even in 100°F+ heat, that soup looks and sounds absolutely amazing… 😋 Thanks as always, you two, for doing all that you do! 😊
This looks delicious! It reminds me of my Grandma's vegetable soup it was the best I ever had. Thanks for bringing back that memory.
Yummmy.....this is so good during cold weather. With lots of onions, it is like onion soup to me with little of carrots and celery. Onions are very good for the body.
