    Oil Temp: 400 Degrees
    1st Rest 30-35 Minutes
    2nd Rest 20 Minutes
    2 Dozen Buñuelos at 75 Grams each
    Dough Ingredients
    6 1/2 Cups AP Flour
    2 1/4 Cups + some water if needed
    1 Teaspoon Salt
    6 Tablespoons Shortening or Butter Shortening
    1 Tablespoon Baking Powder
    Syrup Ingredients
    2 Litters of Water or 8 1/2 Cups Water
    2 1/2 Piloncillo
    3-4 Cloves or 1/2 Teaspoon ground Clove
    Zest of 2 Oranges

    Steph! This recipe came just in time for me! My grandpa is turning 90 on Christmas Eve, and I've been wanting to make these for him. I remember him always talking about how his mom would make buñuelos when he was little. He would get so nostalgic and choke back tears. Now, because of you, I am going to make some for him!     I always made Bunuelos when I was younger with my Mom. I never made them as an adult. Today I made test batch, I cut your recipe in half. They came out so good! I forgot to buy oranges so I sprinkled Cinnamon sugar instead. I'm making the complete recipe and miel for Thanksgiving. I know my family will love them..especially with the MIEL. Thank you.

    I really like how you show each step when you cook and I can see when I would need to add more water or not. Every climate is different and your method of teaching is valuable. I have been trying to learn how to make sour dough bread and just following the recipe doesn't always produce the same consistency of sour dough as in the videos I watch. Thank you for all your hard work and effort.

    My mom also adds baking soda and they come out crispy, crispy with lots of crispy bubbles when fried. They never have any chewy spots. Yum!!

    Ahhhh, memories of my grandma making these, empanadas, and sopaipillas! Your mannerisms in rolling the masa and in expressions and banter between you and your sister bring many great memories of my sister , who became an angel a year ago. i want to make the bunuelos so I can get that cinnamon/piloncillo/frying aroma in my kitchen too ♥️💕.     It’s so Interesting how there is different types of buñuelos. The ones my family makes are snowflake shaped and are covered in cinnamon and sugar and no syrup! I’m not hating let’s make that clear I love seeing different types of things! Looks good 🙌🏻

      We don't use sryup either. Just plain sugar and my grandma just fries them with out putting them on the pan like she did.
      Definitely interesting how everyone cooks them differently

      Oh and there's also some people from different regions who call this 'hojuelas".
      To my mother in law buñuelos Is something different than this.

      My grandma & made them in snow flake or flower design as well covered in sugar & cinnamon...Im guessing each family has different ways of making them depending on what part of mexico there family from.

    My grandmother's recipe called for agua de anise y canela when making the dough. So instead of pain hot water we put the anise/cinnamon tea. Then while frying put a coin in the water so that your oil doesn't smoke while frying.

      That's exactly how my grandmother taught me as well..plus I put my canela sticks in the food processor with sugar and used it to coat the buñuelos. ❤👌

    Thank you for sharing this recipe. My Spanish Teacher taught us how to make theses when I was 13 years old (50 years ago). I made them every year for Christmas until I left home and lost the recipe. I have not heard the end of from my family since. I will surprise them this next Christmas.
    She had some variations:
    1. add 1/2 tsp of vanilla to the water.
    2. Lard instead of shortening
    3. 25 grams of dough rolled to 6 inch rounds and cut the center out using a thimble. They would completely puff up around the cut out, like a donut. Then just powdered sugar. She grew up in Mexico City and I am sure their are as many variations as there are Mexican cooks.

    After watching this, I guess I still do not understand people who complain about videos being too long or people talk too much. I am not of Mexican heritage but love the food and culture. It really helps me to see the entire process and the tips and tricks that mom and grandma said. I appreciated everything said and shared in the video and all of Views on the Road videos. It helps when cooking or baking so much. Please keep educating up of food of Mexico. It helps us a lot. :)

      @@giovannisocci8793 You know one thing I am learning in my culinary journey of other countries and their cuisine is how everyone makes the same dish differently depending on the economics and region of the people. I follow a few Mexican cooks and I tell you they all take the same dish and make it different. Some of those differences can be big and some small but different none the less. I saw the method you mention done on the knee! Another did it like some do with thin crust pizza and pinch it out and yet two others said they grew up with it made as in this video. I think it is just family differences and preferences with the other influences sprinkled in too. In the end we all just want tasty treats! Merry Christmas and Happy New Year!

    My Nana and mom used to make these, but not for Christmas. They were made for New Year's. I make them now since they both have passed away. I make Biscochuelos (sp?) for Christmas. They are so good.

    I’m finally going home for Xmas after 3 years so I can’t wait to have buñuelos from my grandma. If I would’ve stayed in Germany I would’ve made some for my boyfriend and his mom. They love all the Mexican food I make because the Mexican restaurants here are not so great.

      Fry bread may be a little different. Frybread is more fluffy. At least the one im use to.

      Jess yeah. i didn’t know that till a few years ago. my grandmas were more of bunuelos because they were crunchy and crispy, like Views are. whereas fry bread is more bread-y like you said.

    If, you lay them out to air dry before frying it helps with all the air bubbles. This is what my mom does, all the mesa full of tortillas laid out.

    I miss my grandma's bunuelos!. We ate them with beans mostly, but dessert as well. Lol, you got me on the hot water causing arthritis. I've worked in the healthcare field (direct elder patient care)for 40 years, and that's a first for me.

    I wanted to let you know that I did your recipe. We tried to find someone who could make these to my father-in-law‘s dying wish to have some thing made like this and since none of us know how to make it I took on the responsibility of doing it for him. I watched your video a few times before I knew I could do this are used to make tortillas all the time growing up I could do this. Do you have a bright inspirational outlook and that just made me wanna do it myself so I hope I did you proud I know I did myself proud I wanted to thank you for posting your videos and helping someone like me to fill one of my father-in-law’s wishes.

    🤣 I skip sometimes, and I’m about to go to sleep. I hurt too much from working, so I’d probably use my stand mixer dough attachment, to knead the dough. You put alot of love into your food. I love watching your videos, because you’re very descriptive, and make sure to show consistencies, textures etc. to make sure we get it right. You look & talk like my prima Gina. Thank you for caring, and putting so much time into your informative videos. You guys are funny too, which makes watching better.

    Hi! My 2 grandchildren Cali 5 years old & Caleb 9 years old helped knead dough & roll out. They did so good and enjoyed eating them. I had them watch your video while learning. Thank you for your recipe. I wish I could attach picture to show them cooking.

    Stephanie, I absolutely love watching you and Cloud. You’re recipe's look fantastic. Have you and Cloud ever considered in-person cooking classes (Clases tradicionales de cocina mexicana). I would definitely pay to learn from Las reinas de la cocina mexicana. I mean like they do at some of the boogie cooking stores. The two of you are seriously fun to watch, thank you.

    Indeed I enjoy your videos and it has helped me learn your recipes So Awesome but most of all I enjoy your personality. Its not too overpowering or bland.     We used to coat ours with cinnamon and sugar. YUM...Also, my grandmother always put a quarter in the pan with the oil. Not sure why she did that but boy do I miss bunelos.

    I was watching a UA-cam video of the best Mexican Foods to try. I looked on your site and you have most of them YAY! I am watching your videos and taking notes to put them into a written recipe. This takes a long time and I pray that it turns out like what you would make. They turn out FANTASTIC! I cannot imagine how long it takes you and Cloud to put together videos.     Ahhh, I like the comment about channeling your ancestors! My gramma would make gordo tortillas and always had a bowl of freshly chopped green chili (hatch, of course) and fried bacon on the stove. I’m channeling! Yvonne

    Both my husband and I grew up with most of your recipes you share with us. What i don't remember how to make i look up your recipes🙌. Lol. And when my husband makes his recipes that his mom showed him. Our kitchen and our belly's are satisfied. With what we know and your amazing recipes our waistlines don't stand no chance☺🙌❤
