dumb question, why look straight up when in the motorcycle? is it because there are slowdowns on the system for doing this sequence if you don't?
That's correct. The PS3 version lags a lot during the bike chase sequence. Looking up keeps the framerate high and you won't lose time from the lag

Yes but most of the time your console crashes. That's why you don't see anyone attempt it in a full game run
