    Made this last night following this recipe practically to the letter, and it came out beautifully. It went very nicely with your tomato salad recipe as well.

    This came out delicious! (I had to scale it way down because it's just me eating it.) The technique of putting the omelet ingredients into the uncooked egg to evenly distribute it is something I will do from now on! Great recipe!

    I've been cooking eggs with ingredients like this for a long time, but I just scramble it together. I'm going to have to try to make it pretty by making it a tortilla and adding in some paprika to give it a more Spanish flair.

    I just found your channel and have been binge watching... I've been cooking for years but never spanish food, wow! And I'm not a meat eater so this is really great to find. I just made this for breakfast and it was amazing. I didn't have the machego but used monterey jack instead but I think it's the olive oil and potatoes that really make the flavor. Tomorrow I'm making the garbonzo potato stew. Can't wait! Happy New Year!

    Luckily I have all of the ingredients here so I am making this tortilla for my lunch. I'm adding both Spanish sweet and smoked paprika, as well as a little garlic (can never hurt to add seasoning!) and I can't wait to try this. Thank you for sharing this wonderful recipe.

    Lovely, lovely tortilla, with all that beautiful spinach! Thanks❣️ Spinach is just soooo yummy! I just dehydrated two large bags of frozen spinach and powderized them, so I can keep adding spinach to my food on impulse. I always have several veggie powders on hand, as it is such a quick and easy way to eat lots of veggies, even if you don’t really feel like it. Sometimes I just add them to my food as if they were spices, soooo yummy! My favorites are mushrooms, spinach, carrots and leeks. Thanks for the inspiration to veganize tortillas! Hmmmm... Maybe tortillas could be something for you & Chef Jana to collaborate on? Hmmm... I had a delicious tortilla at a restaurant here in my Norwegian home town, before I went plant based (more or less vegan). It was a standard potato tortilla with onions, but it also had pieces of chorizo added. It was sooooo yummy and even cute, served in a little pot... Would have been so much fun with a vegan version, with egg substitute made from scratch (based on chickpea flour, water and maybe some pea/bean protein powder, black salt/kala namak, nootch, agar agar etc) and homemade vegan chorizo (made from a mix of vegan proteins, maybe, with «vegan fatty meat» etc and stuffed in vegan casings, just like real animal meat sausage!). A real challenge, but I know you two can handle it❗️❣️❗️ 😊 💚🌱🍀🧩✅💚

    Love your recipes. I love to eat but lazy in the kitchen. Mostly because of the prep work, not cooking itself. I need to work on my knife skills.
    I used to go and splurge on breakfast every Sunday. That was one of the ways a treat my self. Spanish tortilla and freshly squeezed orange juice were one of them at a fancy bakery.
    Does tortilla is typically eaten with something else? What about a fresh salsa?

    Only one of me--does this last a few days? or can you make a smaller version--say in 10 inch pan? I'd love to do this. Your recipe seems extremely clear and really easy to follow. Combo of flavors would make a great meal (any--breakfast, lunch, or dinner).

    6:03 dude you need one of those silicone spatulas that you can use to get everything out of the bowl/pan. In Dutch they're called "pan-lickers" 😆

    This one is also a keeper for sure. The only problem I have is that you gotta do the Pan Flip lol No more sliding out on a plate that is cheating, right folks...lol lol

    Is he using low flame or medium flame after putting mixture in the pan.. My tortilla always gets stuck at the bottom and it becomes revuelto of Eggs :(

      Usually to make Spanish tortillas you only use olive oil, as it is what really flavors it, but if you don´t have any, you can use another oil :) much love

    Isnt it much easier and faster to first boil the potatoes and then stir it a couple of minutes in the pan with the onions?
