This is a multi tapped auto transformer. It is not a stabilizer! In Australia they are illegal as you cannot adjust more than 10% of the mains voltage. If required then you have to have a separate primary and secondary. Well done!
What a dedicated refurbishing project. When you even rewind the transformer, that is dedication at its finest. I am not so sure about the multi-position rotary switch being able to handle the current, but everything else should... Thumbs Up!

I'd also put the connector block on the inside and feed the cable in through a rubber gromit and a strain relief. I'd do away with that awful two-prong outlet and only use the safe plastic recessed one. That outlet of course should also have protective earth. There should be a fuse, in case the transformer shorts out or in case the output is shorted. Well, good work otherwise; But I really think you could do more for the safety of it.
Great video enjoyed it immensely however, basic soldering rules for "hook and pierced terminals" dictate that you feed the wire through the terminal bend a strain relief hook then solder. This way you have a sound mechanical connection as well as the metal to metal Soldered electrical connection.
At 36:40 you forgot to connect the protective earth connections to the metal case. Basically also at the mains connection. And the sign for the mains switch is upside down.

@restoration-for-use how is this paper like material called that is used in the transformer, to insulate the layers? I have been trying to find this for years now, so i can start one of my projekts. Please help.
If you only need a small amount, you can ask your local motor or transformer rewinding place. I went to one, i asked if i could buy isolation paper from them for my little table fan rewind project, they said 'we can't sell it to you but we can give you some' which was really nice. They rewind huge motors and what i needed was an invisibly small amount to them.

This is NOT a transformer but an autotransformer instead. An autotransformer shall not handle the full power output but only the power difference required to reach the nominal output voltage (220V) from the lowest input voltage (100V) In this case the maximum power required is 3000W * ( 220V / (220V-100V) ) = 1636W and this number became lower when the mains voltage is more than 100V

You mentioned everything, why this thing burned down. All the basic protections are missing.

Try Kapton tape, it’s good for insulation and is considered high temperature tape.
In high power applications, it's a fiberglass or Kevlar fabric. You can buy small quantities off mouser
