I highly recommend Ravensburger 2000 piece "Novel Avenue" by Demelsa Haughton. It was my first 2000 piece puzzle, and sooo much easier than I expected. Every part of the puzzle is a different color/pattern, and there are so many small fun details (like the mouse). It is one of my top 5 favorite puzzles of all time. (I have her 2000 piece version of the "If Fish Could Walk," but haven't started it yet)
