Bun cha in Hanoi (must be in Hanoi) is also my favourite, you made the right choice. For the "Nộm bò khô", you were supposed to mix them all up with the dressing actually at the bottom of the bowl.
It's called Dipping sauce (which contains fish sauce, vinegar, lemon juice, garlic, chili, sugar), NOT BROTH for BUN CHA and BANH CUON. The broth in Pho is made from beef bone, which you can drink the entire broth like a soup. Where the Dipping sauce is only for dipping. That's the difference between BROTH vs DIPPING SAUCE.
Bánh cuốn used to be one of my favorites when I lived in Hanoi, so it's funny to be that you guys didn't seem to like it! I used to live above a massive VinMart, and they had a hot food section..it was one of my super cheap go to meals! I miss it. 😢 Bun cha was also one of my favorites. I'm sure you guys have left by this point, but if you do go back to Vietnam, you need to try phở chiên phồng (stir fried beef, with these SUPER puffy and pillowy fried rice noodle squares) and phở cuốn (uncut pho noodles, with beef and herbs rolled up inside). So many tasty dishes! 😋
Dude bánh cuốn is the best in my personal choice but its really hard to find a spot fit my taste its simple but really hard to make. I can eat 5 portion if i found a good bánh cuốn restaurant. I live in hanoi but i never heard of that restaurant. Bánh cuốn is more complicated than you thought i can tell you more about this dish if you want ...wrap up bánh cuốn supposed to eat with minced pork not chicken inside and i normally eat bánh cuốn with bún chả's meat ball its phenomenal.

Before you eat or drink any Vietnamese food , drink ( egg coffee , coconut coffee ,etc... ) or any Vietnamese liquid dessert . you have to mix everything well in order to get an homogenous mixture that gives you all the flavors at the same time in one bite or draught
Bun cha is my favorite dish of all time. The sauce is supposed to be a dipping sauce and not a broth. You are supposed to pick the leaves off of the herbs and eat with a little bit of vermicelli and meat dipped in the sauce. My stomach is growling. Enjoy your videos.👍

You guys basically walked into my neighborhood. My mom was on the phone the other day and she said the "banh cuon" lady has been asking why I haven't been eating there because I have known her for about more than 15 years. And the pho place is my family's favorite. It's nice to see that everyone is still alright back home. Please do go check out the banh cuon place if you have the chance. curious, but didn't they eat the bun cha incorrectly? i thought the sauce was supposed to be a dipping sauce, but they added ALL of it at once almost like it was a soup, which seems weird to me
@@rinket7779 Hi Rinket. It's not a dipping sauce. To make the sauce, you need a few table spoons of fish sauce, and dilute it with a lot of water, and add sugar, rice vinegar, minced garlic, lime juice if you like a tangy, fresh kick, and if you like it spicy, add chilly. There's also some pickled carrots and green papayas in there, which adds a bit of sweet/sour kick in the broth. The whole broth is very light. It is a combination of savory from fish sauce, light tangyness from the pickled veggies, light hint of garlic, pepper, chilly, and a bit of charred taste from the grilled pork meats and mini pork patties.
Our bun cha is available in all provinces. The North eats vermicelli, while the Central region has a more special type of vermicelli called vermicelli, but the taste is almost the same. Usually, this bun cha dish is only 25k-30k / 1 serving (just over 1$. Vermicelli made from soaked rice and cha) consists of both lean meat and ground fat, mixed with minced onion, pepper, and a little flour. After the soup and monosodium glutamate are made into balls and grilled over charcoal, the dipping sauce consists of vinegar, sugar, garlic and fish sauce mixed together according to the ratio (taste so that it has a delicious sour-sweet-salty taste, then heat it up. in restaurants it costs more than 4$ - expensive price for this dish.

The papaya salad does come with a special dressing if you request for it. They usually leave it on the table for you to add to your bowl as suitable to your taste

Great mix of different types of food you guys tried in this video. In Vietnam, when you see a bowl where it's layered with noodles, veggies, meat...mix it well if there's sauce at the bottom or toss the sauce in if it comes as a side, then eat it. Everyone says bun cha is delicious, many have said it's better than bun thit nuong (the south's version). I cannot believe you didn't like the banh cuon as that's one of my favorite things to eat to this day....but I always eat the ground pork version. A lot of herbs should have leaves picked off the fibrous or tough stems before eating.
Next time you go to Ha noi try the Vietnamese caramelized fish … it’s called Cha Ca Hanoi Ha noi is also very well known for that too. Caramelized fish with vermicelli noodles pine apple or apples and fresh vegetables and fish sauce . They use cat fish for the dish or river fish… you both will love it next time you go that’s a dish you both would love ❤️

the papaya salad to beef Jerky sometime come with some diluted sweet fish sauce but you should mix them up and eat it. it is more of a party of drinking salad or food

BANH CUON can be very delicious. The Banh cuon you had looked a bit weird to me.. both the texture and the dipping sauce (not like any BANH CUON I have had). It may be the way they do it that made it tasted strange and not delicious to you guys. I suggest you give it a second chance. Btw BUN CHA (Boon Char) is also my favorrite dsh besides BUN RIEU (Boon real). I just cooked several kilos of grilled meat and ate BUN CHA everyday for almost 2 weeks now. Haha..

You can eat it as a broth too, that's the whole point of it being in a bowl.

Beef jerky with papaya is more like snack in Vietnam. Mix them up thoroughly before you eat.

fun fact you alway called that fish sauce was a broth.
Haha amazing most foreigner scare of it but you love it and make it like a broth.
You supposed to deep the noodles not put the noodles into the fish sauce , the herb you only eat the leaves not the whole branch
I think you should put rice noodle in separate bowl and put the meat and fish sauce in it. If you put noodle in that big bowl, it might be too salty.

the papaya salad to beef Jerky sometime come with some diluted sweet fish sauce but you should mix them up and eat it. it is more of a party of drinking salad or food

A very interesting video! What do you drink with your food in Vietnam? You seem to be trying so many new things--have you had any stomach issues? I know you have to avoid produce unless it is peeled in Mexico--any problems like that in Vietnam?
Usually we drink soda water and maybe wine if it's at night. We've had zero stomach issues as well. Fingers crossed it stays that way 🤗 - Anna

BANH CUON can be very delicious. The Banh cuon you had looked a bit weird to me.. both the texture and the dipping sauce (not like any BANH CUON I have had). It may be the way they do it that made it tasted strange and not delicious to you guys. I suggest you give it a second chance.
Btw BUN CHA (Boon Char) is also my favorrite dsh besides BUN RIEU (Boon real). I just cooked several kilos of grilled meat and ate BUN CHA everyday for almost 2 weeks now. Haha..

The broth is like the sauce. You not supposed to pour all the broth to the noodle. It will have much stronger taste , and that's not the right way
