      +icecold723 Cardamon, cardamom or cardamum. I think the spelling depends on where you live... I may be right, I may be wrong, just look for 1 of the 3.

    Instead of lemon grass I always use real air freshener, give it a nice natural taste

      I find deodorant works just as well, you can keep it in the freezer for ages...

      I always spray the deodorent over the pan in an 45 degrees angle, so it slightly touches the gas under the pan. You will get a nice flambé going on then, and your dish will taste extra shit, wonderfull!

    I have been a cook for 30 years but our Swedish Kitchen is boring. You have made me realize that there are more than salt and pepper, onions and cream.
    I freeze food at home but could never get to me that I would cook it in the microwave.

    the meatballs is made fresh, and kept on freezer to store the flavors,but they are not supposed to keep for too long as they will get stale. some restaurants buy processed meatballs and store it in the freezer and thats a different case, which a lot of chef depise

    I made this recipe and lets just say it was the best meatball I've ever had. It held together nicely until the side of your fork split it in half like a not knife through butter. Well done. And the sauce was a whole new world of excitement for an aspiring chef like myself.

      You know, he actually became famous because there was a film crew in a kitchen and he literally acted no different in front of the camera then normal operation.
      They showed the film on TV and everyone was shocked. His mum got upset and asked him why he was so horrible, he pretty much replied "Nah, that's just what a kitchen is actually like, it's just more honest than people expected"

      In 1998 he opened his first restaurant "Gordon Ramsay". It only took 3 years (with him as the head chef) for the restaurant to achieve 3 Michelin Stars. He was also the first Scottish person in history to do it. It was AFTER that that he went on to build his restaurant empire and enter into show business. Fool.

    I made these last night and omg so delish! Gordon might have died with my subsitituons though 😂😂. Skipped chilis, only had dried lemon grass (steeped it like tea) powdered ginger. Had one piece of garlic sourdough i mashed up into crumbs ans mixed with ritz for "breadcrumbs". Had to use veggie boullion for the stock...But dang... it was seriously so good!!! Cant wait to remake when i have all the actual ingredients. We're dairy free due to allergies so this was such a gem of a recipe to find!! Thank you @gordon ramsey!

    the best to do that is, once u put the coconut milk let it boil for 8-10 min. then take out the meat balls and let it continue boiling until the coconut milk is a little thick its texture. then put back the meat balls let it simmer for 2 min.

      You could add a dash of corn flour to thicken the broth the moment your coconut hits the pan to speed things up a bit. I don't think GR is a big fan of thickeners though.

    I’m gonna say it because Gordon didn’t: you can use lemon slices if you don’t have lemon grass(because it’s hard to find sometimes)

      Or you could use a trick off Julia Child’s recipe for osso bucco - use thinly julienned lime and/or orange skins, but make sure all the white/pith is removed. It’s not quite the same flavor of lemongrass but it does give you an acidic lemony kick that’s tempered nicely by the creamy sweetness of the coconut milk. That’s what I did since I didn’t have any lemongrass on hand. Tamarind concentrate or pomegranate molasses also work too. Just bear in mind that pomegranate molasses may be too sweet for some so add it little by little, cautiously. For the tamarind concentrate add it half teaspoon at a time, in very small increments. Lemon juice will give these a bit of a kick too if it’s needed.

      the coconut milk balances the spiciness. There is a system in asian countries where when they prepare barbecues (spicy), they will also prepare fruit slices ('cold'). next time you prepare something spicy, add something to counter it (like coconut milk, yoghurt, etc)

    I make Mexican style meatballs 1cup choped onions 4garlic cloves choped 6 large jalepnos seedless choped hand full of choped cillatro 1lb beef 1lb pork 1lb chicken I get a pack of stuffing and grind in food processor add 2 eggs to bind grounded meats make my meatballs you can make a soup formula or eat with pasta or spaghetti vwith meat sauce. I would just use stewed tomatoes choped onions garlic let's stew then put in blender pour back in pan cook add meatballs and let heat put a package of frozen mixed veggies let cook and set and enjoy.

      It looks like he made a 'well' in the middle, maybe by pushing the lemongrass etc. the the side, then just used the sauce near the top. If you want a smoother sauce you can strain it through a sieve, but that's not really homestyle.

    I usually make the meatball ready and put it in the fridge if i wanna cook it within 48 hours, this way they hold themselves and when it s cooked they r tender

      @@husher5142 I made rice using some of the excess oil from the meatballs. I used 80/20 ground beef so I had quite a bit extra. Or you could infuse/bloom the excess oil with saffron to add to the rice or make a plain white rice. I also made sautéed mushrooms with tarragon. And a simple greens avocado blueberry salad lightly tossed with salt, lemon juice and jalapeño olive oil.

    i do everything up to till after putting the meatballs in the pan ... i then transfer it into my marinara sauce taste better to me
