I grow under shade cloth for most vegetables and I make sure I have great compost in raise beds. Also having a Reservoir works well ….are you implementing any of these things? Also he could be growing in a milder season. Did you ever try to grow outside of your hot summer ?

So I'm confused about the water in the containers. When and how often to you pour water in the containers or don't you? Was it just rain water that made them wet?
He has the water level up high enough that by time the roots on those veggies grow they will wick up water. I only use wicks if my reservoir is too deep and plants don’t root fast enough

I have grown many but think about tomatoes lifting up from water so you might need a hole to pour water and fertilizer. I grow like this using a large Tote container as the water source
