  • Easy Homemade Curry Powder / Masala (Fiji Style Family Recipe):
    Ingredients:
    · 2 Cups Coriander Seeds
    · 1 Cup Dried Curry Leaves
    · 1/2 Cup Rice (Any Rice Of Your Choice)
    · 2 Tbsp Fennel Seeds
    · 2 Tbsp Cumin Seeds
    · 1 Tbsp Fenugreek Seeds
    · 5 Star Anise
    · 1 Tsp Cardamom Seeds (Or 6 Cardamom Pods)
    · 10 Cm Piece Of Cinnamon Sticks (Broken Into Pieces)
    · 1 Tsp Cloves
    Utensil:
    · Sieve Or Sifter or Strainer
    · Grinder Or Mortar & Pestle
    Method:
    1. Take a frypan, put it on low heat, add coriander seeds and dry roast it for 5 Minutes, stirring it continuously.
    After 5 minutes, take it out in a big dish.
    1. Put the pan back on low heat, add cumin seeds, fennel seeds and fenugreek seeds and dry roast it for 3 minutes, stirring it continuously and add it to the dish with roasted coriander seeds.
    2. Put the pan back on low heat again, add rice and dry roast it for 8 minutes or until you get a light brown colour. Turn the heat off and add it to the dish with the roasted spices.
    3. Now take the dish with the roasted spices and add curry leaves, cinnamon sticks, cloves, cardamom seeds and star anise and let it cool down for 10 minutes.
    4. After 10 minutes, grind the spices into a fine powder using a grinder in small batches. ( or mortar and pestle).
    5. Strain the powder using a sieve or strainer. Any large pieces remaining in the sieve can be added back to the grinder jar and ground again. Repeat this process until you have finished grinding up all the spices.
    6. Store the curry powder in a sealed container and use it to make your favourite curries.
    7. To keep it fresher for months keep it in the fridge.
    8. Enjoy.

    Hi anitha ji how are u? Today I tried curry powder,and I used for aloo chana it's realy tasty,now we are not in Fiji,but whenever I feel to eat Fiji food,iam trying your recipes only 😘

    Can this curry powder be used as Fiji Meat Masala? Or is the Meat Masala Powder different?

      Dear Mansur, We use this curry powder for all our vegetable and meat curries. I don't know what they have in the meat masala powder. Regards Anita.

      Dear Chris, I am from Fiji as well but live in Australia now. You should be able to get all the ingredients from any Indian shop or make be try your local supermarket in the spice section. Hope this was helpful. Regards Anita.
