Refreshing Taste of Mushrooms with Red Cap and White Stem

A primary forest in Lincang, Yunnan is home to a kind of wild fungus which is extremely red. Every year between June and July, the villagers would basically stay in the mountain looking for such kind of mushroom with a red cap and a white stem. Once fully dried, it can be sold for up to nearly 1,000 yuan per kilogram. It’s a precious wild delicacy in season and also a wonderfully nourishing recipe in winter for people in other areas. In Yunnan, where people live on what they can take from mountains, the happiness from picking and eating mushrooms is always irreplaceable.

This reminds me of my childhood back in Sarawak. My parents would wake me up at 4am and tell me we're going to the forest, but really we were going to gather mushrooms. Like in the video! We have this mushroom called "kulat sawit", which is directly translated to "palm mushroom" because it grows on dead palm trees! It appears very early in the morning and gone by 9am. Always on the dot. It is the weirdest thing. But, those mushrooms were my favourite growing up. There really is nothing that tastes quite as good as that mushroom. Had to wake up and go to the forest in the wee hours - it better be good! Thank you for bringing back those memories for me, Penjie. Love from Malaysia.

срезать-неправильно!Так вы оставляете пенёк который гниёт и гниёт грибница вокруг.К тому же на запах пенька сбегаются жуки-вредители.А вот выкрутив-нет никакого вреда грибнице.

Where I grew up, the only red cap mushroom with a white stem was the classic toadstool, the fly amanita (amanita muscaria). They are poisonous, but not likely to kill you like a death cap. The squirrels eat them. These Yunnan mushrooms are russula genus, which is unrelated. Don't hunt mushrooms without an experienced local guide!
You may be surprised to learn that people prepare and eat the amanitas.

Oh yeah the hallucinogenic mushrooms 🍄 in the 🇺🇸 😂
Alot of people dont realize that amanita muscaria isn't at all deadly but they treat it moreso as deadly when there are other extremely deadly species that look almost inconspicuous that can easily be mistaken as other edible mushrooms such as the destroying angel which can be found all over the world now.
Eatting amanita muscaria however will give you a halucinagetic trip of varying proportions depending on how you treated the mushroom, but it has high potential to treat physiological disorders when properly used. Just know it isn't a death sentence to accidentally eat one.

As a mushroom forager here in the United States these seem they belong in the Russula rosea complex! We have similar species here but those look incredible! Amazing videos as always 😊😊

I love to mushroom hunt as well, but I don't think I've ever come across any of those kind where I'm at in the midwest. Hopefully someday I'll get to find some and try them out
I am from China and I am also foraging in US. I saw a lot of Russula mushroom and people here seems not preferring them. Not sure if it is culture difference or the Russula rosea tastes not good in US....
Rosy Russulas here in the US are spicy and not edible at all. Maybe another species in Yunnan.
