And for the curing salt, I use tender quick, which I believe is a teaspoon or tablespoon per 5 lb. I do not remember but does tell you on the bag of salt how much you need per 5 lb. And you can put any kind of seasonings in it you want. Just make it to your taste but you're drying it. Not cooking it and I do mine in a home built smokehouse. If you get up over 110° inside there you're going to cook it and not dry it. That usually takes me anywhere from 12 to 15 hours to dry mine!

As you pull the jerky off store it in a paper bag. It will allow the moisture to breathe. This is how we do all of our deer and beef jerky

I don't know if most people realize this, but jerky is not meant to be cooked. It's meant to be dried so you need to add a curing salt!

You can use preservatives like celery powder or sodium nitrate just as store bought brands use and stays good for a year if sealed

Prime rib roast for the best jerky and don’t put it in the oven. Unless you want baked beef.
Cut with the grain. It really makes a difference.
I add honey to the marinade. You can dry it out in an electric oven at its lowest setting and leave the door cracked open. Takes several hours.
Worcestershire Sauce, Crushed Red Pepper Flakes, garlic powder is the secret. However it’s to someone’s liking.
You have to make sure that beef is bone dry!!! Absolutely no moisture from the start!! Will come out a hundred times better
