Ha! Yes french toast with that bread! I had leftover cooked rice, so I added 1.5 cups of that instead. I added V8 & extra salt. Kinda use what you have. 😊
I think peppered bacon in rice would be yummy! Kinda like fried rice! Just fry onion, bacon and rice, then add water and one small can of tomato sauce, yummy. Let water evaporate as the rice cooks.
I would substitute canned corn for the green beans in the Spanish rice recipe. The first thing I thought of with the ricotta is a big pan of homemade lasagna - have not had that in a long time.... Use some of the bread for garlic toast or better yet garlic cheese bread!

There's an Italian soup made from tomatoes and seasonings and thickened with bread. I saw it on Michelle Ardents you tube channel as a "poor man's" meal. Looked easy but quite delicious in its simplicity. Could be great with the garlic olive oil too!
I love your channel here in Brisbane Australia. I hope you have bread and butter pudding as one of your bread recipes. It’s a great dessert and was a childhood favourite of mine and still is. You can vary it with stewed fruit layers. Apples or dates are great, or spread some of the bread with hazelnut spread. Yum!
If you turn the tub of ricotta upside down in the fridge it will last 4 months past the expiration date. I have done this for years with yogurt , and cottage cheese. I learned this from the tightwad gazette. In 25 years I have only had 2 go bad . Loved the video ♥️♥️♥️

Yes I have a good way to use white bread. Take a round cookie cutter and cut a hole in the bread in the middle and make sure your frying pan is really buttered and put your bread down in the pan and then break a egg in the hole and you can put cheese on it to and cook it till evg is done but make sure they don't stick and it makes a great meal any time. Oh, if someone gave me vanilla extract I would kiss their dirty feet! The chocolate chip cookies looked wonderful too. As to bread recipes, one thing people tend to forget is that you can make bread crumbs yourself, try the bread in the oven and crush it in a mortar or run it in a blender. You can season it too with for example garlic or herbs or both too. A very simple thing but totally doable for most people since you don't have to hover over your oven while it dries, it is enough that you are just at home for a couple hours. You don't have to make the crumbs the same night, just put the dried bread in an air tight container and do it the next night or next week.
You could do lasagna or stuffed pasta with the Ricotta mix in a few eggs some garlic and Italian seasoning and stuff par cooked noodles cover in sauce and bake it. Works great for freezer meals too.
You can peel the eggplant..like a potato…slice it length wise soak it in salt water for about 30-40 min…then put it in a lasagna as one of the layers….it absorbs all the flavors…very enjoyable…the salt takes the bitterness out…

My daughter and I went to our once a month food pantry today. We've went last month and we were blessed. Today when we went I couldn't believe everything we received. We were both shocked at the amount of stuff we received. It truly will help with our meals for the next week or so. We are extremely thankful! Thanks for sharing what you received and the meal you made. I love Taste of Home meals. ETA take the eggplant and cheese you received to make eggplant type lasagna roll ups. I like eggplant parm personally or roasted eggplant. I'd definitely be making some freezer meals with the ricotta. That is an excellent idea.
If you still have the ricotta, you could make a few lasagnas for the freezer. If you use those disposable pans it won't tie up other pans. The best part of a disposable is you don't have to wash that nasty lasagna pan. I usually use a bread pan because I like more of a deep dish lasagna. It's a nice size for two people with leftovers. That size would probably work for the size of your family, at least until your kids hit their teenage years lol!

Put your pan in the oven and cook it there. A rule of thumb is 1/2 cup of rice to 1 cup of liquid good for regular rice and for like minute rice is 1 cup rice to one cup liquid. Fluff with fork before serving
U r so lucky that u have the food bank u do, I live in Pennsylvania and our food banks r pretty crappy, we usually only get expired canned goods and I’ve actually gotten moldy bread. Rarely we get any protein most grocery stores throw away the food.
TIP: Flip a jar that is hard to open over and flat-handed whack the bottom pretty good and when you flip it back over... voila!... easy peasy lemon squeezy. It helps release the heat seal on the lid.

Those meatballs are delicious with a sweet and sour sauce - I usually saute an onion and pepper, add homemade sweet/sour and chopped canned pineapple. Pour sauce over the meatballs and bake until heated through. Serve over rice. For meal planning - make a double amount of the sauce. Freeze it in a container next to your meatballs and you have an quick dinner ready to go.

We always make yummy crutons with stale bread. Chop it up into little cubes, drizzle with oil, garlic, herbs, salt and spread it on a baking tray. Put in a low oven and stir a couple of times while they dry out. Let them cool and dry out completely then transfer to an airtight container, keeps for weeks. Add to salads, crumble for a yummy pasta casserole topping... or just snack on them!

Highly suggesting grabbing yourself a bread machine from the Goodwill. Just make sure you test it out before you take it. I got 3 from the Goodwill and I'm making all sorts of recipes with them. They are fantastic and bread ready on demand. Great haul Carolina.
I have to hide Maraschino cherries or my son will eat the whole jar🤪 I often get limes in my food pickups-sometimes a huge box full-juice and can as is or make limeade concentrate -waterbath can for cherry limeade or my favorite Malibu rum limeade😋- dehydrate lime zest and dehydrate lime slices for future cocktails and desserts!
@Carolina…As far as following recipes, my mom (r.I.p.) used to like to clip recipes from the newspaper every week and then she’d change half the ingredients and say ‘I just don’t think this tastes right’ hahaha… ‘Um mom…were you really supposed to use nutmeg in there instead of pepper?’ and the other funny little thing she did was try to get us to guess what ingredients were in what she cooked. It always cracked us up and now when we get together and start talking about it we almost cry from laughing so hard.

When our bread gets a bit hard I run it under warm water and then bake it for a few minutes and it’s like new!

Highly suggesting grabbing yourself a bread machine from the Goodwill. Just make sure you test it out before you take it. I got 3 from the Goodwill and I'm making all sorts of recipes with them. They are fantastic and bread ready on demand. Great haul Carolina.

Lasagna with the big tub of cheese
I have to hide Maraschino cherries or my son will eat the whole jar🤪 I often get limes in my food pickups-sometimes a huge box full-juice and can as is or make limeade concentrate -waterbath can for cherry limeade or my favorite Malibu rum limeade😋- dehydrate lime zest and dehydrate lime slices for future cocktails and desserts!

@Carolina…As far as following recipes, my mom (r.I.p.) used to like to clip recipes from the newspaper every week and then she’d change half the ingredients and say ‘I just don’t think this tastes right’ hahaha… ‘Um mom…were you really supposed to use nutmeg in there instead of pepper?’ and the other funny little thing she did was try to get us to guess what ingredients were in what she cooked. It always cracked us up and now when we get together and start talking about it we almost cry from laughing so hard.

Wow!! That's a crazy price!! I'm glad we have chickens. They don't lay much during the winter, but I'm hoarding them all for myself and not selling any right now. I still get about 3 eggs a day between my whole flock and I'm super thankful for that!
