Do they turn out better with more bark with the individual ribs? I've cut pork butts into a couple smaller chunks for more bark, and would think beef ribs stay moist given how much fat is in those ribs.

Not sure if it's cause you're doing it on a pellet smoker but I cooked these at 240f and came out great with plenty of smoke flavour and smoke ring. Is there a benefit to going lower on a charcoal smoker?

We've had these where I am for a while. I also ask my local waitrose to save me a 4 bone rack before they cut them into single ribs. They are also really good.
I've always had no issue getting them at Costco. I think you've cooked the costco plate ribs before? My gut instinct is to think sainsburys quality is worse and that is based on the fact that I find that Costco beef in my opinion is better than chain supermarkets. Your opinion would be welcome having cooked both? Thanks
I normally go for costco, waitrose do some good quality ones - Morrisons were dire. For UK people - costco coarse black pepper is very slightly finer pepper than 16 mesh - for salt my impression is all content creators are getting diamond crystal kosher for free, its bonkers expensive for salt - saxa fine sea salt seems pretty similar grain sized wise and there's a whole host of other options on the shelves.
Love these videos, best resource on UA-cam for BBQ in the UK! I've done these Sainsbury's ribs twice now and keep finding I need to pull these, wrap them and finish them in the oven as the day gets too late after over 8 hours on the smoker. I'm cooking in a offset, chargriller competition pro, start at 110-120c first hour, then 120-136c for 4 hours, then up to 148c for another 3 hours and they're always at no more than 84c internal and not probe tender. Should I try running these hotter, like 148c/300f for the whole cook? Any suggestions would be appreciated!
I've been cooking quite a lot of these. Pretty decent for something you can pickup easy. Very consistent and usually going to turn out better than whatever brisket you can pickup if you decide you're grilling on a whim tomorrow.
Great Video - they look amazing Here's some techy butchery stuff if it helps: Crazy thing is that every steer/heifer has 8 of these ribs !!!!! - well actually more if they take them off the hindquarter flank too :) In the UK - all good butcher shops will know what you want - you can ask them for: Short Ribs Top Ribs Flank Ribs Jacobs Ladder (top end 4 rib bones) But better to explain it is the 4 short ribs from the flank end (or top) of the forerib - Yes that is the correct term for Rib of Beef - it is a forerib = Ribs from the Forequarter as opposed to the rib end of the sirloin (actually called the wing end) which is a hindquarter cut - To make matters more confusing there are 4 bones on a forerib !!!!! - Unless you live in Scotland then there are 5 !!!! - The 1st Rib from the sirloin is cut onto the 4 bones of the forerib, because they leave the side whole and don't cut into quarters traditionally Probably confused everyone now - sorry - but I do hope it helps :)

I've been getting these ribs from Sainsbury's for a couple of years and for about £11/12 for two Dino ribs what's not to like . Like you say though you definitely have to sort out the best ones for even covering of beef AND marveling . I can only manage one rib though they're so rich and filling 👍

How do you find cooking individual ribs different from a rack? I did separate ribs a few months back and I found they got pretty dry. Maybe I should try resting in the drippings for 30-45 mins next time. My local Sainsbury's is right next to Farmfoods so between these and the Swift Ribs budget BBQ might be on the horizon!

Never seen usda brisket in Costco. Only ever seen steaks and other US cuts. Never a packer style brisket unfortunately! Which Costco did you find them at?
Don’t take the fat off, many USA barbecuers don’t do this. The fat is where the flavour is. And it dries out the meat. I’ve done these in foil though. They taste great and are really juicy. Cheers!

I understand maybe you're trying to appeal to American followers, which is fine, but why not give temperatures in both formats, then you satisfy everyone! 🙂

I had some ribs from Sainsbury's about ten years ago. They came prepared with sauce etc, you just had to heat them in the oven. I bit into the first one and it tasted very strange and had a texture that was let's just say disgusting. I scraped all the sauce off to find it was just pure fat with no actual meat in . Never again..
If you have access to a Brazilian supermarket, you can find these even bigger and cheaper. There’s a chain called Brazilian Centre in London and it’s under £10/kg iirc. Picanha about £12!

Hard to find in supermarkets, easier to get from butchers shops.
Lately Sainsbury's does rib roast at 14£ a kg and ribs at 12£. Absolute bargain!

My absolute favorite to cook and eat. No wrapping or fuss, just put them on the smoker and let it go.

I’m aware that fat carries flavour, but for me - silverskin on beef ribs ain’t it. If you cook them right, nothing dries out.
