These are straight fact tips. Love them all. Especially like how you say choice/prime is actually BETTER than wagyu for smoking because there is such thing as too fatty. Also love how you mentioned how important appearance is. Cuz it will taste delicious, but that look is what people want
Wish the background music was a bit quieter and also his mic was too hot, was clipping too much.. Other than that I'm definitely taking these tips. My first ones I think I under shot and took em off around 195 and they tigtend up
You are right, Moe knows his stuff, and these ribs are good, but you are still better off making brisket, which is basically the same without the bones that end up going in the trash. The cook time is almost the same, you get more meat with brisket and everything you paid for. These cuts to me are not real ribs. As the man stated, the bones are more for display.
Hate replying on multiple comments but don't do sugar on beef. Doesn't really add much and just sets up possibility to burn. Even small racks of ribs will take 4-7 hours so just go salt and pepper and some garlic if you like. Remove variables for failure and you will be in good shape.
I smoke wild game, after brining it, tend to have as much smoke on it as possible. I'm seeing on video's to keep the smoke light (blue in color) but it appears those vid are for 'cooking' meat.....so help me with your thoughts on this. thanks

Will still be great but presentation will be lacking. Big thing with ribs and brisket is don't freak during the stall, it will end and your meat will be good. Just keep an eye on temps as Moe pointed out and you will be good. Lots of great info out there, Moe's great, check out Aaron Franklin and Meathead Goldwyn as well.

Which is called a 123A rib plate bone 6-8 not mixed with the short rib plate from the chuck side which is called the 130 plate with 4 bones
Would a sugar based rub work on the smaller beef ribs? I'm assuming those wont take as long as those prime cuts.

Don't do it, they are hard to have sit correctly on the smoker and in my experience they pull back more than when full plate.
