- We are so happy to be back with Jim at Spargos Kitchen. Making the most of a wonderful line caught Pollack and Lobster from the Fishlocker lobster pots Jim prepared an incredible family feast. Lobster and Pollack chowder, Breaded Pollack fish finger sandwiches and Oven baked Pollack with herby breadcrumbs on a bed of Jersey royal potatoes

Has he ever tried double frying the fish fingers? Like 1/2 time fry then cooling then flour, egg, coating.... and fry for 2/3 to get the center fully cooked? James would probably like that ;)

A chef with Rigger boots on. Dont see that every day. Rod you used for that fish John, what length and weight is that ?? please. only ever used heavy gear, fancy a try with something finer.
Have tried cutting the skin from the fish into bits flour them and deep fry them to make crisps they are amazing. There must be some serious action that goes on in that kitchen that the chef needs to wear rigger boots lol

Haha. I eat well constantly 🤣 But I am also very very active. Gym 3-4 times a week on top of the swimming, walking, fishing and general outdoor lifestyle. Plus and this is a big one. I don't drink.

John, family and chef. Wonderful content seeing a gormet meal prepared from your catch. Regarding the chefs statement that a stigma being attached to Pollack is due to commerical fisheries catch this species, at least in |America and most anything you purchase in the frozen or packaged section is made up of processed pollack. For instance frozen fish sticks and fillets is usually pollack and the same can be said of immitation crabmeat and lobster is made of pollack. The fresh variety you got to sample seems to throw the stigma under the bus.seeing it can be made into quite the delicasy.

When I've cooked local (West Wales) Pollack in the past I don't recall seeing quite the big cod-like flakes that I see in the Pollack here?! - Maybe Cornish Pollack is different! I'm prepared to believe it 😄
I seem to remember that Jamie Oliver was once asked his personal favourite dishes to eat and 'fish finger sandwich' was one of the very top answers. And who could deny.

We have shown cooking and eating a few types in various videos. There are actually no poisonous seaweeds - so all are edible. But maybe only half a dozen we get are pleasant to eat. 😉🤣

Brilliant -You made me hungry all the way down in NZ. - Hey John .. as a man of science - can you explain why I became allergic in my early 20's to eating any 'Decapods'? I used previously really enjoy them all but then they caused vertigo and collapse to unconsciousness .. even one shrimp - out like a light.
pollack is usually the number two fish in restaurants where I'm from in the U.S. behind the local Lake Whitefish (Coregonus clupeaformis)
Pollock underrated, more sustainable and comparatively cheap, cooked properly nice chunks of white fish. All the food looked great, but I hate celery cooked or raw, so I would substitute that. Apart from that another excellent demonstration on cooking both the lobster and a variety of ways of cooking pollock, the Fishfinger Sandwiches looked to die for. Thanks for posting.

pollack definitely underrated , the removing of the skin as soon as possible after landing them keeps the flavour
Cod and Ling are tasty but they are the bottom feeders
Have to agree with Jim for sure. Pollock is a very good fish and very versatile a family favourite here and maybe my favourite fish. Great menu the fish fingers are on the list to do.

Stunning John & Jim! Chuckling at Jim pottering around the kitchen in his (steel toe capped?) Rigger Boots! Every morsel looked delicious, apart from the addition of Celery to the Chowder - Can't abide the taste or smell of that stuff! As Jim said, some Parmesan would have been good with the Herb crust! Everyone to their own. The Cheesecake also looked scrummy - would have liked to see how that was made. Regards to all - stay safe & well. 👍👍

Pollack is so underrated, it is used as a replacement for Cod, but I think it is just as good! I think it gets a bad rap because it is used as Surimi or imitation crab and lobster.
I wish I had the application to cook that well. In my case, all preparation would have ceased once the filets were freed. Beautiful spread.

What a meal, I agree with Jim pollack is very underrated fish. For me I love Pollack as with most fish, there are so many different recipes that you can use this lovely fish. Wow... really enjoyed the 3 ways Jim cooked pollack. I have never seen it down here in a grocery store in San Diego, but will substitute cod or sea bass to make these dishes. Thanks for sharing the recipes.
