No better compliment to the chef than to enjoy his/her food. Pollock has been one of my favourites for a long time, beautiful eating fish (and a good fight too)
Omg John wow so glad to see Jim back fit and healthy we’ve missed spargos kitchen and what a return that looked mouth watering yummy!!!!All the very best to you and all the family sending love and best wishes 🏴🏴🏴🏴👍🏻👍🏻👍🏻
We've not long returned from a late birthday lunch for a family member out at a favourite restaurant and suitably 'stuffed but... Jim STILL had my moth watering! That looked LUSH!! Thank you Jim! Good to see you 'in action' again!
WOW! Every bit of that meal looked delicious! And of course, my favorite pie, Lime or Key Lime, either way! John, thanks for another great video! I'm sure Jim knows he has a lot of admirers on your channel, too!
as soon as he was done with the fillets and I heard him say there's nothing left on this its going to the crab pots I smiled cuz he doesn't waste anything
Have to agree with Jim for sure. Pollock is a very good fish and very versatile a family favourite here and maybe my favourite fish. Great menu the fish fingers are on the list to do.
It would be interesting to see some haddock fishing and cooking by Spargos Kitchen ! ! can this happen? Not much Haddock fishing / catch / cooking content....... I'm sure everyone would love to see it ! ! ! Big fans here in America ! Keep up the great videos ! ! !
John, family and chef. Wonderful content seeing a gormet meal prepared from your catch. Regarding the chefs statement that a stigma being attached to Pollack is due to commerical fisheries catch this species, at least in |America and most anything you purchase in the frozen or packaged section is made up of processed pollack. For instance frozen fish sticks and fillets is usually pollack and the same can be said of immitation crabmeat and lobster is made of pollack. The fresh variety you got to sample seems to throw the stigma under the bus.seeing it can be made into quite the delicasy.
Another really great video, Jim's cooking ones are always appreciated because it's something that we can all do at home even if you do have to get your fish from the fishmongers! Thanks for the link to Spargo's kitchen.
Jim is an amazing chef, I'm off out fishing with my boys in August when I get home and I really hope we get some Pollack so we can try this recipe. Great content John and the tribe.
What a meal, I agree with Jim pollack is very underrated fish. For me I love Pollack as with most fish, there are so many different recipes that you can use this lovely fish. The lobster has so many uses too. Thanks John for sharing this video, but I would have loved to share the dinner with you too!!! Take care mate, love to all the family. 🎣🎣🎣🎣🦞🦞🦞🐟🐟🐟🐟
Has he ever tried double frying the fish fingers? Like 1/2 time fry then cooling then flour, egg, coating.... and fry for 2/3 to get the center fully cooked? James would probably like that ;) John needs to help prep, make him hasselback the potatoes ;)
Stunning John & Jim! Chuckling at Jim pottering around the kitchen in his (steel toe capped?) Rigger Boots! Every morsel looked delicious, apart from the addition of Celery to the Chowder - Can't abide the taste or smell of that stuff! As Jim said, some Parmesan would have been good with the Herb crust! Everyone to their own. The Cheesecake also looked scrummy - would have liked to see how that was made. Regards to all - stay safe & well. 👍👍
Immensely entertaining! I love the "from swimming to cooking to eating" catch and cook. Your filleting of the pollock was very educational. I've a feeling that you've done this a few times before! Wish I could have a bite, or at least a sniff, but alas, being a few thousand miles away has its drawbacks.
John well done again to you and all family involved.Staying in a static in a few weeks Fish fingers and the bake look good can do them just need to catch the main ingredients.
I think its time to do a Spargo's Kitchen and Fish Locker merch collab! That John Dory shirt is awesome. Maybe get some aprons out there with a mini receipe book.
Having been a chef all my working life (and specialising in fish and seafood), I would suggest you put the crust on top of the (seasoned) fish, as soon as it goes into the oven, not after the fish has already been in the oven for five minutes, so as the fish is not over cooked. Also as an alternative to flour for thickening, are good Maris Piper potatoes, cut up small and stewed along with the rest of the vegetables, for the chowder.
Been eating pollack for years, so under rated, and easier to catch! Love Jim’s cooking, all those courses really looked the dogs pollocks!! Caught nice bass yesterday, going to feast well tonight!🥂Great work team locker👍
@Saleem Frazer not yet. They just dont sell that kind off thing locally were i live.i keep my eye out for places that do when i’m out of town.before i die though hopefully 😂
What a feast to sit down to John you do like your food and a sweet John after eating that you could not go fishing in case you fell in and sunck tight lines till the next one
