Our Abalone in South Africa are also large like the American and Aussie ones America also has the smaller red ones. I use a French Recipe that a French chef passed on to my dad. It goes like this clean, slice and beat the abalone, salt and pepper and put plenty butter in a pressure cooker, place abalone in and close lid bring up pressure on medium heat cook only 5/10 minutes or so or the butter is likely to burn. Take off heat reduce pressure remove lid add a cup or so of white wine and a sprinkling of nutmeg. Cook further without lid until the sauces have thickened then enjoy with rice. Since then I’ve discovered how to tenderize them without pulverizing the steaks. You take live abalone shuck them and stand them face down on a hard surface when the muscle sags and hangs slackly on one side give it 5 very hard wacks with a mallet place in boiling water for 4 minutes and then remove and prepare as you like, a fork should easily penetrate through the meat and it will be the most tender abalone you’ve had.
Having lived by Fort Brag on the West Coast of America we get a much larger Abalone here but we have to dive in dangerous waters to get them. right into the cold Pacific ocean. I would say on average ours will go 7 to 9 inches. They have be pounded well with a meat hammer and will pound out to around 12 inches and then I make them the same way you do from there on. I don't let them get to brown, maybe frying them on a med to med high heat for around 45 seconds per side (when you pound them out that far they cook really fast and of you cook to long (say over a minuet per side) you might just as well chew on your wellies since the wellies will be much more tender. Do you ever get any really large one or have you ever tried any American Abalones? Your look like the right size and I would like to try them some day. You make them look delicious with just a bit of sauce, lettuce, and fresh hot on a roll
@18:43 The toasting bun on top of the toaster is a total game changer...Some proper busters found as well...Game changer on the ormer foraging fo' sho'...🤫
as always this was fun Jay 💪🏼😁🇮🇹 Sam is a pretty chill bloke, i super love your catch and cook videos they really make my daySSS (yes i rewatch videos from 3 years ago 😁)
In South Africa they chop the ABALONE into small cubes - mix with garlic olive oil and some spices and chilli - scoop out the bud of a big Kelp thingy - fill it with the mixture - wire up the kelp bud then toss it on the coals until its cooked - absolutely delicious ❤
Hi, guys! How are you? Nice ormers catch! I can never get over how clean and clear the water is. What kind of seaweed is the orange colored ones? Be well.
These are the biggest I've seen on your channel mate. Absolute monsters. Tbh I don't even remember any other content creator having big as yours. Holy crap :)
Oh my god PLEASE! Those look so amazing! I wish I could get some ormer over here because these burgers (either the coated or even the non-coated) always make me want to try them! Sadly, the only options I have are frozen ormers from one of the Asian markets, to which usually have some kind of seasoning already on them. Or, ordering them online, to which - I'd get way too many. I don't want that many in case I end up not liking them.
Fantastic video. Love the "uncharted territory" feel. Like being on another planet! Those abalone looked like something out of Jurassic Park. Your family must have been amazed at the size of them? I'd love to know what your dad said when he saw how big they were? Great content 👌 Hope to see more like it in the future. 👍
come 2 new zealand almost every fish and chip shop has ormer burgers, or ormer fritters, but we call them paua pronounced power really delicious diced up and fried with onions and mushroom's till golden then simmered in cream.
We used to have the world's largest abalone fishery here in San Diego but in 1980 Asian abalone blight wiped out virtually the entire fishery. It is now illegal to catch abalone in most of the state.
The minimum size limits are available online. Also, as Jay often mentions, the season duration is also available so that you don't inadvertantly take something out of season. It's easy enough to make your own gauges, Smash and Sam have engraved theirs to identify species and body shapes. If you don't have time to make your own, I have seen these for sale in the UK at numerous shops around our coastline.
I remember when I was a kid my mom had a abalone shell as candy dish which later turned into an ashtray 😢 it was so pretty before my mom started to smoke it looked like a dark opal all fire and blue with greens and orange thrown in this thing was ten inches tip to end she got at Marineland back in the day so when you see these abalone they ain't nothing come prepared to what use to be found.
Don’t your hands get cold, buddy? I pulled a couple oysters off the rocks today ( I live on the coast of Delaware USA) and my hands were frozen for the rest of the day lol
Fishing for Ormers may only take place from 1st October until 30th April. During the Ormering season, fishing may only take place on the first day of each new or full moon and the three following days. It should be noted that if a full moon falls for example on 29th April, fishing still cannot take place after 30th April. The minimum size for Ormers is 9 cm measured across the broadest part of the shell. Daily Limit: 20 Ormers / person, 100 Ormers / boat* * If 5+ persons on board. If less than 5 persons, individual bag limit applies.
I think your talking about jersey laws mate , there’s no limit of how many in guernsey , are season is 1st of January till 30th of April , no diving aloud , there’s 6 days in each month you can forage ormers
@SMASH FISHING! ahhh right. Aussie here so easy to get confused. We can only take 2 abalone here but they can be pretty huge. You need to free dive for them though.
Love to see Sam have a camera. You could cut to 'SamCam' when he spots a big Larry. Just a thought. Absolutely love the channel 🙂
yes !
Both of you guys are awesome. Good ppls

No, a little bit of charcoal does not hurt you. It’s actually good for your digestive system. It helps keep you regular.❤❤
And also helps keeping teeth white too 👍
Oh my god PLEASE! Those look so amazing! I wish I could get some ormer over here because these burgers (either the coated or even the non-coated) always make me want to try them!

Hope to see more like it in the future. 👍
The you tube algorithm keeps sending me recipes for steamed ormer from Chinese cooking channels maybe try one some day.
Is there a daily limit for ormers during the season?😁
There’s no limit in guernsey but should be in my opinion
Nice video Jay 🤘. As you wouldn't find that at McDonald's . You would probably have to ask your mortgage consultant 🤣😉
Hey Sam😁
Love seeing you's doing well, but forsee a fleet of dinges following you the next time. 👀👀🙄😎
Hey Smash
How can I send you a diagram for Mid-water fishing??
You might want to keep that location quiet. Next time you go back, you might not be so lucky. Fantastic work. Really enjoyed watching 👌

We used to have the world's largest abalone fishery here in San Diego but in 1980 Asian abalone blight wiped out virtually the entire fishery. It is now illegal to catch abalone in most of the state.
do you make those shellfish guages yourself or do you need to buy official ones ??

@@TheMerlin672 thank you ever so much for your help
No better feeling turning a rock and finding ormers
You certainly seem to have found the abalone honey hole 💪🦀🦞
Why did you sell the big boat?
Smash & Grab lol , Great Vid Jay !
Right that's it Jay. I'm coming for dinner 😂
There's a queue!😀
I know that spot ,, that’s one of my bass marks one the left a little cove

I remember when I was a kid my mom had a abalone shell as candy dish which later turned into an ashtray 😢 it was so pretty before my mom started to smoke it looked like a dark opal all fire and blue with greens and orange thrown in this thing was ten inches tip to end she got at Marineland back in the day so when you see these abalone they ain't nothing come prepared to what use to be found.

WOO!!
Add tomatoes and cheese and lots of Mayo.
I gotta move to Guernsey 😀
Are Ormers chewy and fishy tasting?
No not at all , soft when tenderized but 0 fishy taste
Yes Sir
I want to try an ormer burger so bad but they just don't exist in the Ozarks..
Don’t your hands get cold, buddy? I pulled a couple oysters off the rocks today ( I live on the coast of Delaware USA) and my hands were frozen for the rest of the day lol
I’m used to it mate 😂 hands like leather
@@SMASHFISHING cheers to that, my friend!!!😎🦞
the abalone are still baby boys to the ones here in tasmania
You have a different species mate in this video the biggest ones were as big a the green abalone get
I'm confused. I thought you said the abalone season was only a few days a year.

Yup yup. No limit in Guernsey yet but Jersey had to introduce due to over fishing.
Great vid as usual! Yummy burgers!
@SMASH FISHING! ahhh right. Aussie here so easy to get confused. We can only take 2 abalone here but they can be pretty huge. You need to free dive for them though.
Sadly, I can't handle spicy food of any kind. Because the food you cook does look great.
how many minutes do these bad boys fry for?
Medium heat untill golden brown 👍
@@SMASHFISHING thanks! i make my own sweet chili sauce at home so i gotta try out some of these burgers you make :D
the one thing that is missing....... THANKING GOD
Can I get an order to go Smash?
👍🇨🇦
Sadly, I can't handle spicy food of any kind.
These are not Aabalones. Abalones are much bigger.
If a fish is 7 to 10 years old you let it go same as what your eating now because they are about 6 to 7 years old fact
a bit of charcoal cant go wrong xD it only give you more risk on cancer xD
it looks freaking delecious tho !!
if they sold ormers in restaurants then they would be exploited.
Definitely!
Learn to count lol its 45 between the pair of you
I thought he said 2 wankers. 😂😂🇬🇧⚓⚓🎣🎣
BIG UP SMASH FISHING!!! GET LIKING AND SUBSCRIBING l! WHAT A BOKE KEEP UP THE GOOD WORK MATEY!!!
Love to see that.
Yes Sir
