    After playing with my WSM 14 for a few years now I've found the best method for me is to soak the wood chunks overnight and put them down first in a complete tight layer then one full chimney of fully lit coals on top of that. That will run about 10 hours for me at half vent, temp will move between 230 and 250 depending on the wind and outside temps. I then add another half chimney of lit coals if I'm finishing a pork shoulder which is what I smoke most often in it. Also I put a couple cups of ACV in with the water in the water pan. It does impart that vinegar smell through the whole cook and if your pork shoulder is on the lower grate that water pan won't dry out. It will dry up if you cook on the top grate.

    I have built a 14inch mini wsm using a smokey joe as a start. It ends up being very similar to this. I use sand instead of water since i have not found a good enough bowl to use as a water pan yet. I do think its one great little,smoker though, works a charm and extremely fuel efficient :)

    Nice video! Would love to see more recipes on that 14” WSM. I have one as well and compared to the rest of my smokers, my 14 just doesn’t get used enough, besides for smoking sausages and what not, but I’ve never done any “big” meats on that little smoker yet, so I would love to see more from you!

    Received my 14" Weber Smoker as a 40th anniversary award from my company a couple of weeks ago. I selected it because Weber produces quality products.
    Never used a smoker so I've been researching its use on UA-cam..... Ready to start up and will be seasoning it on my next day off!

      Dry pit crusts better and faster. Spray water once crust starts to set to get a nice smoke ring. See my Smoke Ring science video on why

    Hello Harry, thank you for the video!
    I'm hoping to hear back from you or somebody else who's experienced with the 14". I've been doing a lot of chicken on mine and can't for the life of me get mine hot enough to finish it.
    I've tried every trick in the book and have no problem reaching 350-450 on my kettle, but the 14 just doesn't want to even get close.
    Could the 14 just not have enough air circulation to take it up that hot? Mine is happy to run at 200, but after a fresh dump of hot coals it'll hit 250 and drop back down pretty shortly.

      Use Jealous Devil charcoal or briquettes. Start with a full Weber chimney. Use my pebble to prop open the lid trick and you'll get to 350F

    Hi Harry, great video and great review on Amazon for the WSM.
    Could you comment on your adjusted cook times for this video based on the lower temp and different setup?

      Don't fret over time and internal temps. Cook until crust sets, foil, pop into oven, remove when probe tender. For every 1 hour online surfing, you must cook 3 hours. Practice makes perfect! :-)

    Beyond the volume of what you can smoke in the WSM 14 versus the larger 22, what is the main difference between the two?

      The all cook the same but if I had my preference at a contest, the 14 for butts, 18 for butt and brisket, and 22 for chicken and ribs. The 18 does the best overall job hence my choice at contests. You can't go wrong with all three sizes

      Can you smoke ribs on the 18?. I heard you have to cut them in half to make them fit..will that effect the way the cook/taste? Or should I go with the 22?

    Curious if you just took the Webber 14 on a trip and pulled the middle part off can you sear on it? Also I hear you can add real wood to the coals and sear that way.

    Greetings from the Jersey Shore. Thinking of adding a 14 to my 22” Kettle. How large of a butt and how large of a brisket can you fit on a 14? I’m not feeding parties or comp cooking, mostly for me, the rest of the family is not big on brisket or butt, though I’m trying to change that..lol.

    Hey Harry love your channel, Ive seen on youtube alot of people say your a fan of WSM I had a chance to buy a brand new unit with extras for half the price of new, didnt work out its a very large unit, my question to you is what do you prefer 18inch or 22inch , im new i have a jumbo joe its just not big enough for a whole brisket, ive also looked at an offset smoker, please give me your thoughts thanks

      I don't have a jumbo joe and it should be similar to using a weber kettle to do a brisket

      The larger the smoker the more fuel you'll use, but you can smoke more meat at once. The WSM 22" will accommodate even very large briskets. If you cook smaller briskets, the 18" will work great.

    Harry, what do you think about doing comps on a 14wsm, 18wsm, and an 18" kettle. I'm new to competing, but I'd like to travel as compact as possible. I know you're all about the one minivan thing.

      My largest brisket on the WSM18 is 27.4 lbs.

      Not sure what are Char Grills as I'm familiar with Grill Grates which gets you beautiful diamond char marks. You can always take the barrel off the WSM14 and grill your meat on the bottom fire box.

      @@toothlife7244 Yes, you smoke @275F on top grate first until burgers are 110F. Then you take off the WSM14 barrel and move the top grate and place over coals. Char your burgers over direct coals until internal is 165F

      Wsm 18 will run 12 + hours on full load of briquettes. Put in oven after it crusts in 8 to 10 hours

      Two 10 lb butts, 15 lb brisket, Ribs cut to 8 bones about 6 racks (3 on top, 3 on bottom) on rib racks.

      Hey Mike, this is the best $199 you can spend on a smoker that will outlast and outlive you. Takes about 30 - 40 minutes to get to 110F internal.

      You can also do a comp trim and fold the packer brisket in half and let the point sit on the grate

    STOP JUST A MOMENT....Ok, for a "How-To" video this just suks. Grand Champion??? C'mon man, have some pity on us "small folks"!! So this summer someone had an almost perfect 14" Smokey Mountain at the curb. Of course I snagged it not knowing how it worked. I was hoping your video could help me out but I guess I was wrong. First off, mine didn't come with the coal chimney or grates but I figured I can get those off of Ebay for cheap. Second, you don't show anywhere in your video where the wood chips go or how many you should use. Third, what is up with the aluminum foil wrapped water pan with no water? I have that but am not too sure how to use it properly for smoking. Lastly, can't I just cook whatever I'm smoking completely in this thing or do I always have to "finish" my meat on another grill? You would think when you are reviewing a small little smoker like this that you would KNOW you are dealing with novices and newbies! I have no disrespect toward you my man but please, put some more effort into your videos if you are trying to educate us on a type of grill. Especially the first tier smokers for us new to the art! Peace.
