Detroit-style pan Pizza 🍕

- Ingredients
- 240g warm water
- 3g dried yeast
- 335g bread flour
- 6g salt
- 4 tbsp olive oil plus more for the pan
- diced low-moisture mozzarella (I know you use Wisconsin brick cheese but that doesn't exist where I live)
- pepperoni, sliced
- tomato sauce (recipe below)
Method
1. Add the warm water to a bowl with the yeast and mix in.
2. Once dissolved, add the flour and salt and bring together with a spoon, you don’t need to knead it at this point just bring the dough together.
3. Cover and let it rest for 1 hour at room temp.
4. After the hour, turn out onto an oiled bench and knead for 3-4 minutes or until smooth.
5. Place back into the bowl, cover and let prove for 1.5-2 hours or until it’s almost doubled in size.
6. Once doubled, get an oven tray ready and oil the bottom and sides. Place the dough into the tray and stretch until it fills it. Then top it with the cheese then pepperoni and finally the sauce in strips.
7. Bake in a 260c oven (pizza oven) for 18-20 minutes or until cooked through and crispy (if you don’t have a pizza oven just turn your kitchen oven as hot as it will go and put some trays on the shelf to preheat).
Sauce
- 1 can of diced tomatoes
- 4 cloves garlic, crushed
- 1 tsp chilli flakes
- 1 tsp oregano
- pinch of sugar
- pinch of salt
- fresh basil if you have some
Method
1. Place everything in a pot and simmer for 20-30 minutes or until it’s reduced by 1/3.

Pro tip for Detroit style, line the edge of the crust with shredded cheese! The crunchy cheese that melts up against the pan adds a whole ass layer you didn't know you were missing!!!

From Michigan here. I would suggest making sure the edges are lined with cheese. The caramelized cheese crust is what really makes Detroit pizza stand out. Huge fan!

One thing I can suggest to you Andy, was GM at a Detroit style pizzeria and learned a lot from some OG’s there… after you let rise in the bowl let rise again in the pan with the cheese on it to tenderize the dough further, overnight. Should be 12-18 hours rising in total (crazy, I know). There are some that would disagree with it but the results are insane. Also recommend a small amount of sweet tea in the yeast starter. Goes crazy and the flavor is different somehow, can’t quite explain it. Much love and blessings, would love to see you make a southern style chicken pastry 💪🏼💪🏼
Did you guys put cheese on the pan before the dough? There’s a “Detroit” style pizza at Walmart that does that.

Sweet tea in the yeast? Sounds like something I should try. Do you have a %? I make pizzas a lot and know even a 1-2% difference can change the pizza a lot.
I’m going to try this at 3% and see how it comes out.

This dude knows pizza, been doing it a while and that had to much sugar and not enough sauce. Also the cheese needs to be shredded to spreed it to the edges.
Growing up near Detroit, I didn't even know there was a Detroit style pizza, I just thought it was a square pizza. The corner slices are the best.

What makes a Detroit style pizza a Detroit style pizza is a combination of 2 things: a thick, fluffy bread and cheese along the outside (and sometimes bottom) of the pizza dough! Don’t forget that crusty cheese Andy!!

Even though I grew up with New York style because of my family's roots, the first time I had Detroit style I swore to never go back! The cheesy and saucy edges are just so damn amazing! I always get the 8-Corner whenever I order from Jet's!

The main complaint I had is the cheese didnt form the crust on the edge. You normally pile up shredded cheese on the edges so it melts down the side against the pan to make a crispy crust.

I have to order brick cheese where I am in the States, but if I don’t feel like waiting I mix in a sharp cheddar cheese with the mozzarella for a little funk. Top with pecorino as well.
In NY this Pizzeria by me makes Detroit style with burrata, pickled onions, pepperoni and hot honey. So good.

Went there after seeing a bunch of his shorts. It was so disappointing, tubbys steak and cheese is way better
Definitely missing some things.... the edges are lined with cheese so that it becomes cispy and the pan should be oiled more to almost fry the dough, which makes a crispy but fluffy crust. I love me some detroit style. I wouldn't say it's "better" than NY because it's a different breed of pizza. I'd maybe put it up against chicago style, and in my preference, I think Detroit wins it. chicago style is just an open calzone lol
I agree with you. He had the steps right, cheese, pepperoni and then sauce, but where was the Frico? And no four corners?! Also, the dough seemed really dry. Usually a Detroit-style Pizza is a really hydrated dough.

Solid as always. You got the pointers here from fellow Michiganders on the crust. My wife also likes buttercrust, which is basically buttering the edges, which in addition to shredded cheese make for extra crispy edges with an amazing buttery flavor.
Also. Legend has it that the original recipe was cooked using a pan intended to hold nuts and bolts in motor parts assembly lines. Another reason it’s so uniquely Detroit pizza.

St. Louis style pizza is the only style of pizza I'm aware of that literally cannot taste good, no matter who makes it or what ingredients they use. The concept itself is flawed to the core.
That looks good, but it's missing a critical ingredient - gotta add shredded monterey jack cheese around the edge to melt into a crispy cheese coating on the crust. This deserves a redux

Almost...A true Detroit style pizza gets an obscene amount of melted butter/Parmesan slathered all around the edges before it goes in and after it comes out. Also,we usually let the dough rise in the pan. You stretch the dough just before making the pizza. Trust Me... I'm from Detroit🤔💯😂 Love all you do Andy!

Yes, the best part is the shredded cheese melting and falling in between the crust and pan, forming a super crisp slightly blackened edge when it comes out of the oven (or in this case, the ooni)
