  • Potol Korma is a popular Bengali dish made with pointed gourd (potol) in a rich and creamy yogurt-based sauce. Here's a simple recipe for Potol Korma:
    Ingredients:
    - 4-5 pointed gourds (potol)
    - 2 medium onions, chopped
    - 2 cloves of garlic, minced
    - 1 teaspoon grated ginger
    - 1 tablespoon mustard oil or ghee
    - 1 teaspoon cumin seeds
    - 1 teaspoon coriander powder
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder (optional)
    - 1 cup yogurt or Cashew and Poppy seeds paste
    - 1 sugar for taste
    - Salt, to taste
    - Chopped cilantro, for garnish
    Instructions:
    1. Peel and chop the pointed gourds into small pieces.
    2. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them sizzle.
    3. Add chopped onions, garlic, and ginger. Saute until onions are translucent.
    4. Add coriander powder, turmeric powder, and red chili powder (if using). Cook for 1-2 minutes.
    5. Add the chopped pointed gourds and cook until they are tender.
    6. In a bowl, whisk together yogurt and lemon juice. Add salt to taste.
    7. Pour the yogurt mixture or Cashew and Poppy seeds paste over the cooked pointed gourds and mix well.
    8. Reduce heat to low and simmer for 5-7 minutes or until the sauce thickens.
    9. Garnish with chopped cilantro and serve with rice or roti.
