Unfortunately it is very, very rare for me to do a decoction mash because it is such a pain on this system. Most of the time I will do a step mash instead. If I want to do decoction, I have to bring in an additional pot/burner to do it. It was much easier on my older system, which you can see in my earliest videos, where the boil kettle had an open top and I could reach the bottom to transfer the thick mash portions between the mash tum and boil kettle.

In your recipe you call for 12oz of carafa 2. Is that correct?
Sorry about that, I accidentally put the percentage of Special X I used in my original recipe. For Carafa II, I would keep it around 3.2 oz, or 2%.
