  • This recipe is traditionally made with chicken, fish or oxtail. I love lamb chops and I love a Jamaican brown stew so I paired the two and it was absolutely delicious. The tenderness of the lamb with a rich flavourful sweet and spicy gravy. So easy to make and it comes together quickly. Served it with rice and peas and fried plantain.

Great recipe and straight forward. What would you serve this with? Rice and peas? White rice? Or eat alone?

I use a bay leaf and deglaze the pan with some English dark beer or Guiness stout and the rest the same.

This is almost perfect (for me). I believe lamb should be eaten medium or medium well. I think I may have to sear the lamb first and then do the rest of the process and then add the lamb at the very end only for a few minutes because I don’t want it cooked all the way through.

I was a huge fan at first but I realize you’re not versatile with your food use the same spices on every dish we need something refreshing something different in a Caribbean food is good but you need to be versatile and your food is not versatile it’s the same type of seasoning used on different types of meat it’s becoming boring so no
