I've been looking into this and yes, stovetop use needs a diffuser or the vessel will crack, and only low or medium heat. Personally, I wouldn't risk it and just put the tagine in the oven for the entire cooking time.

The tagine is conical shaped for a purpose and has a hole in the top for additional water. Once its cooking you don't mess around stirring it. It is an artistic presentation when finished. Same here. The thought of not rinsing anything that came from the outside is a no no for me. So far I haven't acquired any form of bacterial infection when I rinse my chicken.

Rinsing chicken is a terrible idea. Heat kills bacteria. Rinsing chicken just sprays raw chicken water around your sink and kitchen. Far worse.
