At first I did know that different lego themes could be in medieval fantasy but papa proved me wrong, lego themes like ninjago, lego superhero or Lego city could make this much
I think that Smaug minifigure will also fit perfectly as a dragon king in a fantasy world. I also think that Avatar's creatures are also nice to diversify the fauna (banshees and Toruk for the flying ones, Ilu and Skimwing for the aquatics ones and the Thanator and 6 legs horses for the lands ones).
It's beautiful how you put your all imagination to the minifigures details, made the groups, and of course, the most exciting, the lore! 😂🤩 Thank you for brought me back to my childhood imagination. One of my favorite fantasy classes to play as is the Battle Servant aka The Butler/Maid. First introduced to me in Fire Emblem Fates Conquest (Nohr). Daggers for both melee and ranged attacks and using staffs (or magic) to heal and buff allies, while de-buffing or inhibiting enemies.
This is awesome. I would love to see an open world Lego game similar to Skywalker Saga but based on these creations. In fact, I would love to see Lego games based on their non-licensed sets.

For the Unded Empire you can use the skeletons from the new ninjago sents they have bone wepons and have the colors green white and red I think they can be used very well for your fantasy world
For the blue wizard from the Lego lion castle set, I would recommend to switch the body with the one that has an orange scarf and moons 'n stars all over it, and have him wear an orange tattered cape from Hobgoblin. then he would look more interesting.
I just realize that we can play DnD and any other table top game using lego. Like imagie assembling and customing your unit and play it in Warhammer battle scene. Or roleplaying DnD where you can upgrade your armor and weapon visibly in each story. And the best part was we can easely create the scene and change it later. God the possibility are endless
You said that you wanted to customise the new Rivendell I think that you should make the trees the same colour as in set 76432 and replace the brightly coloured floor tiles with plain grey ones also I think you should replace the maps of middle earth with the maps of kalldaria.
