IMHO, it's because your videos are too fast, they don't have enough overhead shots, and you should use "see through" bowls so that mere mortals like us can see the consistency of what you are making so we can try to duplicate (hah!) Love your videos but want to see you take your rightful place as the G.O.A.T of baking.
This looks amazing as always, Bruno! Pistachio desserts are delish! One of my favorite desserts I have had was a pistachio custard tart which utilized pistachio flour, I would be elated if you could create a recipe for this dessert I love!
I think I will try making this for Christmas. I always add a touch of green gel color to my pistachio paste, though. That color reminds me of a baby's diaper.

For cooking, gas stoves are known to be above everything else. No doubt about it. However, induction offers a great alternative for those who can't use gas or is not allowed for safety reasons. I cannot promote any cookware brands. What I will strongly advise though is to look up for stuffs that are 100% made-in the EU or USA. Not "Assembled" but 100% made-in. Second, pay attention to reviews - never take for granted the ones that are highlighted on private websites, but rather read out reviews from Google and Amazon. These, good or bad can hardly be removed. So, you have now the tools to equip your kitchen with durable material 🤩
