This recipe is delicious! Yum Yum! I did add a little more broth, so it ended up being 2 cups of rice and 2 1/2 cups of broth, just because I like my rice a little fluffier and softer. I tried the 1 to 1 ratio before for some other recipes and I just like my rice with a little more liquid. Just my personal preference :) The rice had such great taste! I made this dish and used 22 minutes for brown rice. The dish was tasty and will be repeated. I used 2 tablespoons of Rotel instead of jalapeno which gave nice flavor. My brown rice, at 22 minutes with about a 20 minute natural release was too crunchy so next time I may try 30 minutes with a natural release. I really like your recipes and your presentations. My brown rice turned out hard. Not sure what we did wrong. I was so looking forward to enjoying it. We still ate it like it was. Not sure if I should have tried to cook it a little more. I had already stirred in the tomato sauce. The flavor was there. Next time I will try white rice. I love all of your videos. I show them to my mom, she's 92 years old and she can't believe that you can learn how to cook using youtube. She is amazed. She wanted to know where you are from. Just loves how you explain everything.
I am sorry about your rice. Did you allow for natural pressure release? Also, be sure you use the manual or pressure cook button (NOT RICE--that is LOW pressure, and this needs HIGH pressure) Any of those reasons can cause hard rice. Let me know so I can further troubleshoot for you. As for your mom--so sweet! I love hearing she enjoys my videos as well. I grew up in NE Ohio, but now live in North Carolina. I have been in the SE for almost 18 years.
@@AMindFullMom Oh wow my son lives in Hollyridge North Carolina. Its so nice there next to the beach. He's in the Marines. Thank you for your comments. We are just not use to eating brown rice. This is gumbo city and we eat jasmine rice with everything. I'm in New Orleans.
@elizabethsheets5514 what a beautiful area for your son to be stationed. And so blessed by his service. Thank him for us. As for the rice, brown rice can take some getting used to. You can follow this same recipe using jasmine rice and cook for 3 minutes on pressure with natural pressure release.

First time ever cooking them from scratch and won't go back to canned ever again. i have been making Mexican rice on the stovetop and it turns out well but will try your recipe. For my stovetop rice I was using Knorr tomato bouillon rather than stock. I think I will use it in your recipe too, and still add the tomato sauce at the end. if you think that might be too much tomato in the rice, please let me know. I have one more video to comment on, then I promise I will leave ya alone for a while. Bless you! Philippians 4:13.
NEVER worry about asking too many questions!! I am always happy to help. I have never tried tomato bouillon, so I am not sure the intensity of the flavor. I would suggest preparing without the tomato sauce and if it does not have enough flavor, you can mix in some salsa and make it with the tomato sauce the next time.
Oh no Kristen…got my first burn notice and pot didn’t come to pressure… I scraped bottom before turning on…. Not sure what went wrong… maybe my instant pot…. I’ll see how next recipe goes…..
I am so sorry Tonya! Did you rinse the rice and layer the tomato sauce on top? Also, check to be sure your seal was on correctly. Let me know if that helped!
Hi Florence, I am sorry you had a burn notice, but I doubt it was the liquid. Did you ensure your vent knob was sealed? Did you stir in the tomato sauce instead of dolloping on the top of the rice? (that can cause a burn notice)

Thanks for sharing! As for your rice being crunchy, try adding a tablespoon of additional water as well.

All you need is rice, water, and caldo de pollo powder. Brown rice, add caldo and water, boil, simmer for 20 minutes. 😊

What happened to browning the rice? That's a staple in the recipe
You can certainly do that, I find it adds very little to the result for this recipe.

Why tomato sauce?
I find it helps to add the flavor and richness.
Needs more liquid for 2 cups of rice. Mine burned.

Yes I did stir it all together. Flavor is good. I didn’t save any burn part, there wasn’t a whole lot.
