The hot oil is what brings out the flavour of the soy sauce and green onion and in Chinese cooking this is a must for getting rid of fishy taste as well

Yellow catfish maybe but I personally wouldn’t with catfish as I find they have a muddy earthy tasty. I’ve used them in soups…
Have you tried with Perch fish?
I don’t like perch…we use to fish it a lot and I find it too bony and not a lot of meat 🥹 I prefer crappies and sunfish over perch
