    THE LOVING LOAF
    Serves 8
    Ingredients:
    FOR THE MUSHROOM MIX
    - 1 large yellow onion, finely diced
    - 4-5 cloves of garlic, minced
    - 4 celery sticks, finely diced
    - 2 cups mushrooms, sliced, preferably shiitake (can use
    baby bella, white, button, cremini or any other type as
    well)
    - 1 cup walnuts, roughly chopped
    - 2 tablespoons fresh thyme (leaves only), or 1 tablespoon
    dried thyme)
    - 1 tablespoon fresh rosemary leaves, chopped, or 1⁄2
    tablespoon dried rosemary
    - 1 tablespoon fresh sage leaves, chopped (or 1 teaspoon
    dried sage)
    - 1 can jackfruit (about 40 oz) which makes about 2 cups;
    rinsed, core and seeds removed (we used the Trader Joe’s
    brand)
    - 1 can 15 oz no-salt chickpeas, drained very well and then
    roughly mashed
    - 2 cups of your favorite vegetable broth or a plant-based “chick’n” broth (we added 2 cubes of low sodium Not-Chick’n bouillon cubes from Edward & Sons brand in 2 cups of hot water)
    - Extra virgin olive oil
    - Freshly ground black pepper
    1⁄2 tablespoon Worcestershire sauce (or liquid aminos)
    FOR THE TOFU MIX:
    - 1 package of extra firm tofu, pressed and wrapped in a towel to remove as much of the moisture as possible
    - 1 low sodium bouillon cube (we used Not-Chick’n from Edward & Sons brand)
    - 3 tablespoons nutritional yeast
    - 1-2 tablespoons Worcestershire sauce (or liquid aminos)
    - 1 teaspoon yellow miso
    - 1 tablespoon tapioca starch
    - 1/8 teaspoon liquid smoke (optional)
    DRY INGREDIENT:
    - 2 tablespoons of bread crumb or oat flour (to help firm the
    texture of the loaf mixture)
    FOR THE BASTING SAUCE:
    - 1⁄4 cup vegetable broth
    - 2 tablespoons liquid aminos
    - 1 teaspoon dried or fresh thyme
    - 2 tablespoons orange juice
    - 1 teaspoon rosemary, chopped
    - Freshly ground black pepper
    FOR THE SKIN:
    - Two rice papers soaked in the basting sauce (recipe above)

    You cook with the patience and skill of a surgeon's hand. I truly appreciate such a talent as yourself promoting a vegan lifestyle. It is the life style promoting health and happiness free from a curse that comes from hellish ways of animal cruelty.

    My mom used to boil all the jackfruit seeds until it’s soft. It’s delicious.

    Watched the whole video - the cubes have a lot of ingredients that I do not use - are you okay with those ingredients and what could be a substitute. Also what box of parchment paper did you use and where to get those rice papers. Happy New Year

    Are their anchovies in Worcestershire sauce?

      The 365 brand (Whole Foods brand) is vegan, does not contain anchovy. Another vegan brand is The Wizard Worcestershire sauce, available online (tastes most like the non-vegan Lea & Perrins Worcestershire to me).
